This recipe is particularly interesting as it uses two wine varieties \u2013 a Chardonnay and a Syrah. The wine pairing is a Cabernet Sauvignon.<\/p>\n<p>I suggest reading the recipe all the way through before beginning.\u00a0 Three separate preparations should be made before everything is put together and served.<\/p>\n<p>Many thanks to St. Francis Winery &amp; Vineyards for permission to add this recipe to the Wine Trail Traveler website.<\/p>\n<p>Cheers!<br \/>\nKathy<\/p>\n<p align=\"center\"><strong>Calimyrna Fig with Lavender and Gorgonzola Mousse<\/strong><\/p>\n<p>Serves: 4<\/p>\n<p>Category: Appetizer<\/p>\n<p><span style=\"text-decoration: underline;\"><b>Prepare Figs<\/b><\/span><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>12 Calimyrna figs<br \/>\n2 cups St. Francis Chardonnay<br \/>\n1 teaspoon lavender<br \/>\n\u00bd cup honey<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>In a small saucepot, bring the Chardonnay, lavender, and honey to a simmer.<\/li>\n<li>Add the figs and simmer for about 1 hour or until the figs plump up and become soft.<\/li>\n<li>Remove from heat. Cool.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\"><b>Mousse<\/b><\/span><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>\u00bc cup Gorgonzola<br \/>\n\u00bc Ch\u00e9vre goat cheese<br \/>\nA few tablespoons milk<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>In a blender, pur\u00e9e the Gorgonzola and goat cheese with the milk until smooth but not runny.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\"><b>Syrah Syrup<\/b><\/span><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>1\/2 cup St. Francis Syrah<br \/>\n1 cup sugar<\/p>\n<p><b>Directions<\/b><\/p>\n<p>1. In a small saucepot, bring the wine and sugar to a boil and reduce to about \u00bd cup. Cool.<\/p>\n<p><b>Serving Instructions<\/b><\/p>\n<p>Cut each fig in half.
