This chilled gazpacho may be just perfect for this Labor Day weekend and any warm day.<\/p>\n<p style=\"text-align: center;\"><strong>Fresh Peach Gazpacho<\/strong><\/p>\n<p><i>Serves 4<\/i><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1\u00bd pound fresh peaches, preferably white<br \/>\n\u00bd pound Early Girl tomatoes, yellow<br \/>\n1 cup J Vintage Brut (reserved to finish the soup)<br \/>\n\u00bc cup honey<br \/>\n2 tablespoons lemon juice<br \/>\n1\u00bd tablespoon fresh ginger, finely grated<br \/>\n\u00bd cup plain yogurt<br \/>\n1 English Cucumber for garnish<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>Pit and coarsely chop peaches and tomatoes, leaving skin intact. Place in a stainless steel saucepan.<\/li>\n<li>Add J Vintage Brut, honey and lemon juice.
