One comment made today after a whirlwind visit to approximately ten Cava producers was, \u201cMore people can enjoy Cava more frequently than a Champagne.\u201d Why? The retail prices for many Cavas are more affordable than Champagnes.<\/p>\n<p>How good are Cavas?<\/p>\n<p>Just as with any other sparkling wine or still wine, the quality is determined by the quality of the grapes and the winemakers many decisions. We discovered many delightful Cavas this past week. There is also a regulatory board for Cava.<\/p>\n<p>The vineyards for Cavas must follow strict regulations set out by El CAVA Regulatory Board. El Cava controls:<\/p>\n<ul>\n<li>Amount of grapes harvested from vineyards<\/li>\n<li>Monitors the quality of the grapes<\/li>\n<li>Monitors the final grapes destination<\/li>\n<\/ul>\n<p>Production controls include:<\/p>\n<ul>\n<li>Tipping stoppers for Cava must be marked with the date of production to meet the minimum ageing requirements<\/li>\n<li>Regular inspections<\/li>\n<li>Cava labels must be authorized by the control board<\/li>\n<\/ul>\n<p>Specific ageing of Cavas must be observed<\/p>\n<ul>\n<li>Cava must be aged for at least 9 months<\/li>\n<li>Cava Reserva must be aged for a minimum of 15 months<\/li>\n<li>Cava Gran Reserva must be aged for at least 30 months.<\/li>\n<\/ul>\n<p>According to the El Cava website: \u201cTo qualify as a \u2018Gran Reserva,\u2019 cavas are subjected to special quality controls including organoleptic and analytical examinations. The indication \u2018Gran Reserva\u2019 many only be used for \u2018Brut Nature,\u2019 \u2018Extra Brut\u2019 and \u2018Brut,\u2019 which are aged for thirty months or more in the same cellars. The label must necessarily show the indication \u2018Gran Reserva\u2019 and the year of the harvest. In this respect, Cava is the only sparkling wine which can bear this distinction.\u201d<\/p>\n<p>If you haven\u2019t tried a Cava yet, maybe it\u2019s time to do so. The Cava producers we toured on our visit to Catalonia are exporting to numerous countries around the world.
