You may want to try making this with thin slices of leftover turkey from your Thanksgiving feast.<\/p>\n<p>Many thanks to\u00a0\u00a0<a href=\"http:\/\/www.mirassou.com\">Mirassou Winery<\/a>\u00a0for permission to use this recipe.<\/p>\n<p>Cheers!<br \/>\nKathy<\/p>\n<p style=\"text-align: center;\"><b>Mini Maple Turkey Panini with Riesling Cranberry Relish<\/b><\/p>\n<p>Prep time: 20 minutes<br \/>\n<span style=\"line-height: 1.5em;\">Cook time: About 15 minutes<\/span><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>Riesling Cranberry Relish<\/p>\n<p>1 cup sugar<br \/>\n3\/4 cup Mirassou Riesling<br \/>\nJuice and zest of 1 orange, divided<br \/>\n1\/2 cup minced crystallized ginger<br \/>\n1 (12-oz.) bag fresh cranberries<\/p>\n<p><i>Maple Turkey Panini<\/i><\/p>\n<p>2 tablespoons maple syrup<br \/>\n4 slices sourdough bread<br \/>\n4 slices dark rye bread<br \/>\n12 slices smoked turkey<br \/>\n1 cup shredded Gruyere cheese<br \/>\n2 tablespoons butter<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>Heat sugar, wine and orange juice in a small pan over low heat. Continue to cook until sugar begins to caramelize and has a nice caramel color.<\/li>\n<li>Remove from heat and stir in orange zest and ginger; let cool slightly.<\/li>\n<li>Place cranberries in a food processor and pulse on and off to finely chop; add to caramel mixture. (Relish may be made 1 week ahead.)<\/li>\n<li>To prepare sandwiches, brush a little maple syrup onto one side of sourdough bread slices.<\/li>\n<li>Place 3 slices turkey, a little relish and \u00bd cup cheese on each slice then top with dark rye.<\/li>\n<li>Spread sandwiches with a little butter and place in a preheated Panini grill; cook for 3 to 4 minutes or until cheese is melted and bread is grill marked.
