{"id":11345,"date":"2015-05-02T14:12:44","date_gmt":"2015-05-02T19:12:44","guid":{"rendered":"http:\/\/winetrailtraveler.com\/blog\/?p=11345"},"modified":"2015-05-02T14:12:44","modified_gmt":"2015-05-02T19:12:44","slug":"lobster-bisque-recipe-with-chardonnay-from-j-vineyards","status":"publish","type":"post","link":"http:\/\/winetrailtraveler.com\/blog\/2015\/05\/02\/lobster-bisque-recipe-with-chardonnay-from-j-vineyards\/","title":{"rendered":"Lobster Bisque Recipe with Chardonnay from J Vineyards"},"content":{"rendered":"<p>Check out this recipe from <a href=\"https:\/\/www.jwine.com\">J Vineyards &amp; Winery<\/a>\u00a0located in Healdsburg, California.<\/p>\n<p style=\"text-align: center;\"><strong>Lobster Bisque<\/strong><\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p>3 oz Clarified Butter<br \/>\n1 lb Mirepoix, small dice<br \/>\n2 lb Lobster Shells, excluding the claws<br \/>\n2 oz Tomato Paste<br \/>\n4 oz Brandy<br \/>\n1 bottle J Chardonnay<br \/>\n4 qts Water Sachet<br \/>\n2 Bay Leaves<br \/>\n2 Tbl Whole Peppercorns<br \/>\n1 bunch Parsley Stems<\/p>\n<p>To Finish<br \/>\n2 cups Cream<br \/>\n\u00bd cup Brandy<br \/>\nJuice Of 2 Lemons<br \/>\n2 Tbl Salt<br \/>\n2\u00bd pints Butter, cold and cubed<br \/>\nSalt and White Pepper to taste<\/p>\n<p><em>Directions<\/em><\/p>\n<p>Caramelize the mirepoix and lobster shells in the butter. Add the tomato paste and saut\u00e9 lightly. Add the brandy and flamb\u00e9. Add the J Chardonnay. Deglaze and reduce the liquid by half. Add the water and sachet and simmer for 1\u20131\u00bd hours, skimming occasionally. Strain, discarding the sachet and reserving the liquid and solids. Pur\u00e9e the solids and return them to the liquid.<\/p>\n<p>Return to a simmer and cook 10 minutes. Strain the bisque through a fine chinois lined with cheesecloth. Return the bisque to a simmer. Add the cream, brandy, lemon juice, and salt and bring to a boil. Whisk in butter.
