This would be tasty on a warm summer day!<\/p>\n<p><b>Marinated Vegetable Salad<\/b><\/p>\n<p><i>Ingredients for Dressing<br \/>\n<\/i><\/p>\n<p>1\/4 c olive oil<br \/>\n1\/4 c dry white wine<br \/>\n2 T red wine vinegar<br \/>\n1 T chopped fresh parsley<br \/>\n1\/2 t sugar<br \/>\n1\/4 t salt<br \/>\n1\/4 t crushed dried basil leaves<\/p>\n<p><i>Ingredients for Salad<\/i><\/p>\n<p>1 c avocado chunks<br \/>\n1 c sliced fresh mushrooms<br \/>\n3\/4 c halved cherry tomatoes<br \/>\n1\/2 c sliced ripe olives<br \/>\n1\/3 c chopped red onion<br \/>\n3 c cooked rice, cooled<br \/>\nred onion rings for garnish<\/p>\n<p><b>Directions<\/b><\/p>\n<p>1. Dressing: combine oil, wine, vinegar, parsley, sugar, salt and basil in screw top jar.<br \/>\n2. Pour dressing over avocados, mushrooms, cherry tomatoes, olives and onions in shallow pan.<br \/>\n3. Cover and chill 2 to 3 hours.<br \/>\n4. Add rice; toss lightly.
