At the time we met Bruce Perrygo, a staff member who shared several of his recipes with us. If you are looking for a hot soup to warm your insides as the cold weather begins its march across the Midwest and East Coast, check out the recipe for Tomato and Spinach Soup.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><b>Tomato and Spinach Soup<br \/>\n<\/b><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>2 T extra-virgin olive oil<br \/>\n1 medium onion, finely chopped<br \/>\n2 ribs celery, finely chopped<br \/>\n1 T minced garlic<br \/>\n\u00bd cup Ingleside Cabernet\/Merlot<br \/>\n1 (28-ounce) can diced tomatoes, drained<br \/>\n1 (28-ounce) can crushed tomatoes<br \/>\n2 cups vegetable stock<br \/>\n6 ounces fresh baby spinach washed, dried and shredded with knife<br \/>\nSalt and pepper to taste<\/p>\n<p><b>Directions<\/b><\/p>\n<p>1. Heat a medium soup pot over moderate heat.<br \/>\n2. Add oil, shallots and garlic and saut\u00e9 5 minutes.<br \/>\n3. Add wine and cook another 3 to 4 minutes.<br \/>\n4. Add drained tomatoes and crushed tomatoes, stir.<br \/>\n5. Add stock and stir to combine soup.<br \/>\n6. Stir in spinach in handfuls to wilt it and combine with soup.<br \/>\n7. Season soup with salt and pepper to your taste.<br \/>\n8.
