Celebrate by adding this Apple Roasted Turkey Tenderloin with Cider Pan Sauce to your recipe box.<\/p>\n<p>With Thanksgiving quickly approaching and many thinking\u00a0of turkey, it\u2019s time to offer this special recipe from the\u00a0<a href=\"http:\/\/www.eatturkey.com\" target=\"_blank\" rel=\"noopener noreferrer\">National Turkey Federation<\/a>. This turkey recipe calls for apple cider and dry white wine.<\/p>\n<p><a href=\"http:\/\/www.eatturkey.com\/recipes\/11601\" target=\"_blank\" rel=\"noopener noreferrer\"><b>Apple Roasted Turkey Tenderloin with Cider Pan Sauce<\/b><b><\/b><\/a><\/p>\n<p>The recipe was created by Chef Jason Walter, The Machine Shed Restaurant in Lake Elmo, MN.<\/p>\n<p><b><i>Ingredients<\/i><\/b><\/p>\n<p>TURKEY TENDERLOINS: 4 Pounds<br \/>\napple cider: 2 Cups<br \/>\ncider vinegar: 2\/3 Cup<br \/>\nplain croutons: 4 Cups<br \/>\ntart apples, peeled, cored and diced: 1 Cup<br \/>\npecan pieces, toasted: 1\/2 Cup<br \/>\nfresh thyme: 2 Tablespoons<br \/>\nsalt: 2 Teaspoons<br \/>\nfreshly ground black pepper: 2 Teaspoons<br \/>\nminced fresh garlic: 2 Teaspoons<br \/>\napple cider: 1\/2 Cup<br \/>\nheavy cream: 1\/2 Cup<br \/>\ncanola oil: 4 Tablespoons<br \/>\ndry white wine: 2 Cups<br \/>\napple cider: 2 Cups<br \/>\nminced fresh garlic: 2 Teaspoons<br \/>\nfreshly ground black pepper: 2 Teaspoons<br \/>\nheavy cream: 1\/2 Cup<br \/>\ncold water: 1 Cup<br \/>\nfresh sage, chopped: 2 Teaspoons<br \/>\nTURKEY BASE: 2 Tablespoons<br \/>\nroux: 4 Tablespoons<br \/>\ngarlic mashed potatoes: As needed<br \/>\nthyme candied carrots: As needed<br \/>\nfresh thyme: As needed<\/p>\n<p><b><i>Directions<\/i><\/b><\/p>\n<p><i>Marinade<\/i><\/p>\n<p>Butterfly each turkey tenderloin and pound it to an even thickness of 1\/4-inch.<br \/>\nMix 2 cups of apple cider and cider vinegar. Add tenderloins and cover.<br \/>\nSet aside to marinate in the refrigerator.<\/p>\n<p><i>Apple Stuffing<\/i><\/p>\n<p>Mix croutons, apples, pecans, thyme, salt, pepper, garlic, cider and heavy cream together. Allow to macerate 10 minutes then mix again.<\/p>\n<p>Spread stuffing atop the each tenderloin, leaving 1-inch of space along the edges.\u00a0Tightly roll each tenderloin and tie with butcher&#8217;s twine.<\/p>\n<p><i>Sear and Oven Finish<\/i><\/p>\n<p>Heat oil in roasting pan and sear tenderloins until lightly brown.<\/p>\n<p>Finish cooking tenderloins in a preheated 350 F oven until the internal temperature reaches 170 degrees F. Remove the tenderloins from the pan and allow to rest.<\/p>\n<p><em>Cider Pan Sauce<\/em><\/p>\n<p>Deglaze roasting pan with wine and remaining cider; reduce by 1\/2. Reduce the heat and stir in garlic, pepper, cream, water, sage and turkey base.<\/p>\n<p>Mix well, and when just below a simmer, thicken with the roux. Continue to cook until smooth and thicken.<\/p>\n<p><i>Service<\/i><\/p>\n<p>Serve turkey with garlic mashed potatoes and thyme candied carrots.<\/p>\n<p>Slice tenderloins into 2-ounce turkey medallions. Fan 3 to 4 medallions over potatoes.
