Try the Bison Meatballs soon!<\/p>\n<p style=\"text-align: center;\"><strong>Bison Meatballs<\/strong><\/p>\n<p>Serves 4<\/p>\n<p>Pairs well with <a href=\"https:\/\/www.merryedwards.com\/xe\/xe.asp?page=viewcat&amp;cat=cv-klopp-ranch-pinot-noir\" target=\"_blank\" rel=\"noopener\">Klopp Ranch Pinot Noir<\/a><\/p>\n<p><em>Meatballs<\/em><\/p>\n<p>INGREDIENTS<\/p>\n<p>1 pound ground bison, drained of excess liquid and blotted dry<br \/>\n2 large garlic cloves, mashed<br \/>\n\u00bc teaspoon alaea sea salt<br \/>\n\u00bc teaspoon ground black pepper<br \/>\n\u00bc teaspoon paprika<br \/>\n1 tablespoon olive oil<\/p>\n<p>PREPARATION<\/p>\n<p>Incorporate all ingredients together by kneading with your hands. Shape into 12 medium-size meatballs. Saut\u00e9 in olive oil in skillet over medium heat, turning to lightly brown all sizes. Do not overcook as bison is quite lean. Set aside.<\/p>\n<p><em>Sauce<\/em><\/p>\n<p>INGREDIENTS<\/p>\n<p>4 teaspoons olive oil<br \/>\n\u00bd Walla Walla Sweet Onion, diced<br \/>\n\u00bd pound Maitake mushrooms, broken into individual sections<br \/>\n1 14.5-ounce can tomatoes (try Muir Glen Organic Fire Roasted) or equal amount of blanched, seeded fresh tomatoes<br \/>\n\u00bd cup Merry Edwards Russian River Valley Pinot Noir<br \/>\n1 teaspoon Worcestershire sauce<br \/>\n1 teaspoon balsamic vinegar<\/p>\n<p>PREPARATION<\/p>\n<p>Saut\u00e9 onions and mushrooms in olive oil until soft, slightly brown and liquid has evaporated. Add other ingredients along with meatballs. Cook for about 25-30 minutes to meld and incorporate flavors, reducing sauce to a thick consistency. Spoon sauce over meatballs periodically during the reduction phase to keep meatballs moist. Spoon meatballs and sauce over julienned, lightly steamed squash.
