The entr\u00e9e below from the Put PORK on your FORK website reminds me of holiday cooking as it includes lemon slices, dried apricots and figs as well as two cups of red wine.<\/p>\n<p>If you are looking for more holidays recipes, check out the Wine Trail Traveler <a href=\"http:\/\/winetrailtraveler.com\/recipes\/food.php\">recipe section<\/a> and the list of recipes we suggest for <a href=\"http:\/\/winetrailtraveler.com\/recipes\/christmas1.php\">Christmas and the holidays<\/a>.\u00a0Do you have the necessary ingredients you need for the holidays you celebrate?<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p style=\"text-align: center;\"><b>Stuffed Tenderloin with Honey Wine Sauce<\/b><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>2 Canadian PorkTenderloins, well trimmed, about 12 oz each<br \/>\n2 cups dry red wine<br \/>\n1T orange juice<br \/>\n2\/3 cup honey<br \/>\n3 lemon slices<br \/>\n1\/3 cup each, quartered dried apricots and figs<br \/>\n1 T dried rosemary, chopped<span class=\"Apple-converted-space\">\u00a0 <\/span>(or 1\/4 cup fresh)<br \/>\n1\/4 lb prosciutto, thinly sliced<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>In a saucepan, combine wine, orange juice, honey, lemon slices, apricots and figs. Bring to a boil; reduce heat and simmer 10 minutes.<\/li>\n<li>Remove lemon slices, apricots and figs with a slotted spoon; discard lemon slices and reserve apricots and figs.<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>Cut each tenderloin to, but not through, opposite side. Open like a book and flatten with a mallet to about 1\/2&#8243; (1.25cm) thick, pounding long edges together. Sprinkle rosemary, apricots and figs over the surface. Roll up tightly from long end.<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>Wrap prosciutto slices around pork, tying in several places with string.<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>Roast at 375\u00baF\/190\u00baC for about 35 to 40 minutes, to an internal temperature of 155-160\u00baF (68-70\u00baC). Remove from oven. Tent loosely with foil; let rest 5 minutes.<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>Meanwhile, gently boil wine mixture until reduced by half, about 20 minutes.<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>Before serving, remove strings from pork; slice 1\/2? (1.25cm) thick.
