The first recipe was donated by Pearmund Cellars in Broad Run, Virginia. The second recipe is from Badia a Coltibuono, Gaiole in Chianti (SI) Italy. Enjoy.<\/p>\n<p>Cheers! Kathy<\/p>\n<p><strong>Fauquier Cabernet Franc Stew<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p>2 pkgs stew meat (cut in bite size pieces)<br \/>\n1 small bag carrots (peeled and sliced in 1\u201d pieces)<br \/>\n1 onion (peeled and diced)<br \/>\n3 stalks celery (sliced)<br \/>\n2 cans sliced water chestnuts<br \/>\n2 (15 oz) cans of stewed tomatoes<br \/>\n2 (15 oz) cans Hunt\u2019s Tomato Sauce<br \/>\n5 T Kraft Minute Tapioca<br \/>\n1\u00bd cups Pearmund Cellars Cabernet Franc<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p>1. Stir all ingredients together and place in an ovenproof dish.<br \/>\n2. Bake 5 \u2013 6 hours at 250-300 degrees.<br \/>\nServe over \u201cNo Yolks\u201d Broad Noodles.<\/p>\n<p>Recipe provided by <a href=\"http:\/\/www.pearmundcellars.com\/\">Pearmund Cellars<\/a>, Broad Run, Virginia.<\/p>\n<p><strong>Peposo (Beef stew from Impruneta)<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p>2 \u00bc lbs stewing beef (preferably a little gristly)<br \/>\n\u00bd head of garlic in cloves, peeled<br \/>\n\u00bd bottle red wine<br \/>\n2 T whole or crushed black peppercorns<br \/>\n2 c tomato sauce<br \/>\nsalt to taste<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p>1. In a large saucepan, place the garlic cloves, the beef, the peppercorns, enough salt to taste and the tomato sauce.<br \/>\n2. Bring to a boil, cover and reduce the heat to simmer. Cook slowly for about 2 hours adding a little water or broth should the stew dry out or start to burn and stirring occasionally.<br \/>\n3.
