St. Patrick\u2019s Day is almost here so why not celebrate by preparing an Irish festive dish. Below is a recipe\u00a0from Thornton Winery<\/a> in Temecula, California for “Bacon & Cabbage Soup.” Pair the soup with Cote Red, a dry red wine. Bacon & Cabbage Soup<\/strong><\/p>\n

Serves 4<\/p>\n

1\/3 lb piece of Irish bacon or Canadian bacon
\n3 T unsalted butter
\n1 Onion finely chopped
\n2 Yukon gold potatoes peeled and cut into \u00bd inch pieces
\n6 c chicken stock
\n2 bay leaves
\n1 t salt
\n\u00bd t black pepper
\n\u00bd head of Savoy Cabbage into \u00bd in pieces<\/p>\n

Directions<\/strong><\/p>\n

In a small saucepan, combine bacon and enough cold water to cover.\u00a0 Bring to boil, simmer for 7-8 minutes drain and cool.\u00a0 Cut bacon into 1 inch pieces.<\/p>\n

In a medium sauce pan, melt butter add onion and cook 3 to 4 minutes.\u00a0 Add potatoes and cook an additional 2 to 3 minutes.\u00a0 Add chicken stock, bay leaves, salt and pepper and bring to a boil.\u00a0 Reduce heat to low cover and simmer until potatoes are soft, about 10 minutes.\u00a0 Add cabbage and simmer an additional 5 minutes. Remove bay leaves.\u00a0 Puree soup until smooth using a blender.\u00a0 Return to pot stir in bacon.<\/p>\n

Pair with a glass of Cote\u00a0Red, a dry red wine.<\/p>\n
