My family knows that I love bacon so this is going to be one of my personal \u201ckeeper\u201d recipes.<\/p>\n<p>This recipe for <strong>Apple Bacon Tomato Soup <\/strong>is from <span style=\"color: #0000ff;\"><a href=\"http:\/\/www.flyingotter.com\"><span style=\"color: #0000ff;\">Flying Otter Vineyard and Winery<\/span><\/a><\/span> in Adrian, Michigan. Please note that the recipe is from Sharon Anway who made the soup using Flying Otter\u2019s Noiret.<\/p>\n<p align=\"center\"><strong>Apple Bacon Tomato Soup<\/strong><\/p>\n<p>Recipe from Sharon Anway, made with our Noiret.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>5 slices bacon<br \/>\n\u00bd white onion, chopped<br \/>\n2 tsp. garlic, minced<br \/>\n2 stalks celery, chopped<br \/>\n2 medium apple, peeled and chopped<br \/>\n1 cup red wine<br \/>\n2 cups beef stock<br \/>\n1 (15.5-oz) can pinto beans (drained)<br \/>\n1 (14.5-oz) can Italian style diced tomatoes<br \/>\n1 bay leaf<br \/>\nSalt and pepper to taste<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>1. In a small saucepan over medium heat, cook and stir the apples in the red wine until soft, don\u2019t overcook.<\/p>\n<p>2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, coarsely chop, and set aside.<\/p>\n<p>3. In same pan, saut\u00e9 white onion, garlic and celery in the bacon grease over medium heat for 3 to 5 minutes, or until tender.<\/p>\n<p>4. Stir in beef stock, pinto beans, tomatoes and bay leaf. Bring the mixture to a boil. Reduce heat.<\/p>\n<p>5. Add the bacon, apples and red wine into the soup mixture.<\/p>\n<p>6. Season with salt and pepper. Continue to simmer, stirring occasionally until well blended.<\/p>\n<p>7.
