This may be one of those recipes that is a &#8220;keeper&#8221; for your recipe box.<\/span><\/p>\n<p>Cheers!<br \/>\nKathy<\/p>\n<header>\n<h2><\/h2>\n<h2>Goat Cheese Stuffed Beggar\u2019s Purses<\/h2>\n<h2><span style=\"font-size: 13px; font-weight: normal;\">Serves 4-6<\/span><\/h2>\n<\/header>\n<dl>\n<dt>Created by Chef\u00a0<span style=\"font-size: 13px;\">Brian Streeter<\/span><\/dt>\n<dt><\/dt>\n<\/dl>\n<p><span style=\"font-size: 1em;\">Ingredients<\/span><\/p>\n<p>\u00bd c. + 2 T. all purpose flour<br \/>\n\u00be c. milk<br \/>\n2 eggs<br \/>\n2 T. melted butter, plus extra for cooking the crepes<br \/>\n3 T. chives, chopped<br \/>\npinch salt<br \/>\n<span style=\"font-size: 13px;\">6-12 chives<br \/>\n<\/span><span style=\"font-size: 13px;\">12 oz. goat cheese<br \/>\n<\/span><span style=\"font-size: 13px;\">1 tsp. tarragon, chopped<br \/>\n<\/span><span style=\"font-size: 13px;\">\u00bd tsp. flat leaf parsley, chopped<br \/>\n<\/span><span style=\"font-size: 13px;\">\u00bd tsp. lemon zest<br \/>\n<\/span><span style=\"font-size: 13px;\">black pepper<\/span><\/p>\n<h4>Directions<\/h4>\n<ol>\n<li><span style=\"font-size: 13px;\">To make the crepes, combine the flour, milk, eggs, butter, chives and salt in a blender jar.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Puree until smooth, scraping down the sides of the container and process until thoroughly blended.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Pour the batter into a small pitcher. Cover with plastic wrap and let stand for 1 hour.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Place a small non-stick skillet over medium heat and add \u00bd teaspoon butter.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Lift the pan off the heat and ladle about an ounce of the batter into the pan. Quickly tilt and rotate the pan so that batter covers the entire bottom of the pan with a very thin coating. Return to the heat and cook until the cr\u00eape bubbles and the bottom is lightly browned, about 1 minute.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Flip the crepe or turn the cr\u00eape over with a spatula. Return the pan to heat and cook the second side until lightly browned. Slide the cr\u00eape onto a plate. Repeat with the remaining cr\u00eape batter. Don\u2019t be discouraged if the first couple of crepes don\u2019t turn out right. It usually takes a couple tries to learn the technique.<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Preheat oven to 350\u00baF.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Blanch the whole chives in a small saucepan of boiling water for 10 seconds. Drain and run under cold water to stop the cooking. Pat dry with a towel and set aside.\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">In a bowl, combine the goat cheese, tarragon, parsley, lemon zest and a little cracked black pepper. Stir to combine.<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Lay 6 crepes out on a work surface, pale side up. Refrigerate or freeze the remaining crepes for future use.<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Spoon about 2 tablespoons of the goat cheese filling in the center of each cr\u00eape.
