This large winery offers delightful experiences for visitors that can include vineyard tours and wine &amp; food pairings A Wine Trail Traveler article about our visit to St. Francis Winery and Vineyard is available <a href=\"http:\/\/winetrailtraveler.com\/california\/stfrancis.php\">online.<\/a><\/p>\n<p style=\"text-align: left;\" align=\"center\">Cheers!<br \/>\nKathy<\/p>\n<p align=\"center\"><strong>Lobster Bisque with Bay Shrimp<\/strong><\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>One 1\u00bc pound live lobster<br \/>\n\u00bc cup butter<br \/>\n1 large onion, peeled and chopped<br \/>\n1 carrot, peeled, chopped<br \/>\n1 celery rib, chopped<br \/>\n2 tablespoons flour<br \/>\n1 quart clam juice<br \/>\n4 tablespoons tomato paste<br \/>\n\u00bc cup brandy<br \/>\n1 cup St. Francis Chardonnay<br \/>\n1 sprig fresh thyme<br \/>\nPinch saffron threads or powder<br \/>\n1 cup cream<br \/>\nSalt to taste<br \/>\n1 cup bay shrimp meat, cooked<\/p>\n<p><b>Directions<\/b><\/p>\n<ol>\n<li>On a cutting board, cut the lobster in half lengthwise. Remove the meat from the tail, coarsely chop the tail and body shells. Save the claws to use later.<\/li>\n<li>Heat the butter in a large heavy bottomed soup pot. Add the shells and cook stirring a few minutes over a moderately high flame.<\/li>\n<li>Add the onion, carrot and celery. Cook the vegetables a few minutes to soften and color slightly.<\/li>\n<li>Add the flour and cook a few minutes to remove the raw flour taste.<\/li>\n<li>Add the Brandy and carefully alight.<\/li>\n<li>Add the clam juice and wine. Bring the bisque to a boil and reduce the heat to a simmer. Simmer for 45 minutes.<\/li>\n<li>Add the claws and cook for 15 minutes. Remove the claws, and use the meat for another dish. If the bisque becomes too thick, you may need to add water.<\/li>\n<li>Strain the bisque, pressing to extract as much liquid from the shells and the vegetables as possible.<\/li>\n<li>Pour the bisque into another pot.
