inoxydable: A French term for stainless steel. Peninsula Ridge Estates in West Beamsville, Ontario, Canada makes a Chardonnay called Inox, short for inoxydable. The Chardonnay was fermented and aged in stainless steel and saw no oak.
lees: Dead yeast cells that build up the sediment at the bottom of a barrel or fermentation container.
