Title: Tyrannosaurus Red Spaghetti Sauce


2 c Carlson Vineyards Tyrannosaurus Red Wine
4 med size onions – chopped
¼ c olive oil
4 cloves garlic – chopped
¼ c butter
1 c celery tops – chopped
1 green pepper – chopped
¼ lb mushrooms - chopped
1 t parsley
1 t basil
½ t pepper
1 t rosemary
2 t salt
1 lb Itlian sausage – sliced
1 lb lean ground beef
1 lb fresh ground pork
2 (6 oz) cans tomato paste
1 (1 lb 4 oz) can tomatoes

Note: The Tyrannosaurus Red is made from 100% Lemberger.


1. Sauté onion in olive oil and butter until golden.
2. Add garlic and sauté 2 more minutes.
3. Add parsley, celery tops, green pepper, mushrooms and seasonings.
4. Sauté well stirring often.
5. Brown meats in heavy large pan.
6. Add veggies and mix well.
7. Add tomatoes, tomato paste and wine.
8. Bring to a boil, lower heat and simmer 3 hours.

Serve over pasta – freezes well.
