Title: Grilled Salmon Cherry Sauce
3 c pitted Northwest fresh sweet cherries
1/2 c water
1/2 c dry white wine
1/4 c chopped onion
1 clove garlic, finely chopped
2 T honey
2 T fresh lemon juice
1 t freshly grated lemon peel
1/2 t salt
1/4 t crushed red pepper flakes
1. In large saucepan, combine all ingredients; bring to a boil over medium-high heat.
2. Reduce heat and simmer, uncovered, 30 minutes or until mixture thickens, stirring frequently.
3. Serve over grilled salmon.
