Yesterday as a part of the 37th Harvest Festival at Messina Hof we attended a Wine and Food Pairing event. One of the foods prepared was Mushroom Ragu.
During the food pairing it was mentioned that you can use red or white wines to pair with mushrooms. The mushrooms absorb some of the wine and take on some of the characteristics of the wine. Use the same wine to pair with the mushroom dish.

Mushroom Ragu
Ingredients
½ c olive oil
1 T garlic
½ yellow onion (small dice)
1 lb Shitake mushrooms (torn)
1 lb button mushrooms (sliced)
2 T fresh chopped rosemary
1 qt. demi-glace
2 c Messina Hof Merlot
Salt and pepper
Directions
- Heat olive oil and sweat the onions until tender.
- Add all the mushrooms and sauté.
- Once all the water from the mushrooms has evaporated, add the wine and reduce to (au sec.) almost dry.
- Add the demi-glace and rosemary and bring to a simmer.
- Let simmer for 10 minutes and season with salt and pepper.
