Marinated Vegetable Salad for Vegetarians and Wine Lovers

The recipe below is likely a vegetarian’s delight. For anyone who likes to cook with wine, the salad dressing calls for 1/4 c of white wine. Marinated Vegetable Salad

 Servings: Makes 8 servings.

Ingredients for Dressing

1/4 c olive oil
1/4 c dry white wine
2 T red wine vinegar
1 T chopped fresh parsley
1/2 t sugar
1/4 t salt
1/4 t crushed dried basil leaves

Ingredients for Salad

1 c avocado chunks
1 c sliced fresh mushrooms
3/4 c halved cherry tomatoes
1/2 c sliced ripe olives
1/3 c chopped red onion
3 c cooked rice, cooled
red onion rings for garnish

Directions

Dressing: combine oil, wine, vinegar, parsley, sugar, salt and basil in screw top jar.

Pour dressing over avocado, mushrooms, cherry tomatoes, olives and onion in shallow pan. Cover and chill 2 to 3 hours. Add rice; toss lightly. Garnish with red onion rings.
