Avocado season is here!
According to the California Avocado Commission, avocados are a nutrient dense food, contain good fats, are naturally sodium and cholesterol free. Below is a recipe for Marinated Vegetable Salad from the USA Rice Federation . The recipe includes avocados, mushrooms, tomatoes, olives, onions and rice. This would be tasty on a warm summer day!
Marinated Vegetable Salad
Ingredients for Dressing
1/4 c olive oil
1/4 c dry white wine
2 T red wine vinegar
1 T chopped fresh parsley
1/2 t sugar
1/4 t salt
1/4 t crushed dried basil leaves
Ingredients for Salad
1 c avocado chunks
1 c sliced fresh mushrooms
3/4 c halved cherry tomatoes
1/2 c sliced ripe olives
1/3 c chopped red onion
3 c cooked rice, cooled
red onion rings for garnish
Directions
1. Dressing: combine oil, wine, vinegar, parsley, sugar, salt and basil in screw top jar.
2. Pour dressing over avocados, mushrooms, cherry tomatoes, olives and onions in shallow pan.
3. Cover and chill 2 to 3 hours.
4. Add rice; toss lightly. Garnish with red onion rings.
