Scone Jam Made with Rosé and Pinot Noir

As you prepare your Christmas Day list of foods to serve, you will want to check out this recipe from J Vineyards & Winery in California. This recipe might just be perfect for Christmas Day breakfast or any time of the day when guests drop by. The fig jam recipe calls for J Brut Rose and J Russian River Valley Pinot Noir.

Scones with Bacon & Blue Cheese, Fig Jam

Makes 32 Scones

Ingredients

Ingredients for Scones

2 cups all purpose flour
1/3 cup sugar
1 tablespoon baking powder
½ teaspoon salt
3 oz. cold butter
1 egg
½ cup cream
½ cup bacon, (15 slices), diced and cooked
½ cup crumbled blue cheese

Ingredients for Fig Jam

1-1/2 cups J Brut Rose
1-1/2 cups J Russian River Valley Pinot Noir
3 cups water
12 ounces figs, diced
2 cups sugar
½ cup lemon juice
Bouquet Garni: 2 sticks cinnamon, 1 tablespoon + 1 teaspoon allspice, 2 teaspoons cloves

Directions

Directions for Scones

Combine dry ingredients in a bowl. Add butter and mix well. Add egg and remaining ingredients; mix to combine. Place batter on floured surface and shape into 32 (1/2 inch thick) triangles. Bake in preheated 425-degree oven for 12 minutes.

Directions for Fig Jam

Simmer ingredients in a saucepan for 45 minutes or until thick, stirring as mixture thickens. Remove bouquet garni; refrigerate jam until ready to use. Makes about 16 ounces. Serve with scones.

Both novice and experienced wine enthusiasts will enjoy an article on the Wayfair website about building a wine collection for your home. The article, “How to Start a Home Wine Collection” just may inspire you to start or add to your home wine collection. We were fortunate to be one of the wine writers selected to participate in an online interview. Others who chose to participate in the interview questions were Greig from Winderlusting and Larissa from the Wine Collective.

After an introductory paragraph by Wayfair, the participating wine collectors answered the following questions:

How do you select wine for your home collection? 

Where do you store your wine?

What region do you collect from the most?

What types of wine do you recommend everyone have in their home collection?

How many wines do you have in your home collection?

What wine/bottle do you save for special occasions?

While our responses were included in the article, we enjoyed reading what Greig and Larissa had to say about home wine collecting.

Give a Bourbon Workshop Experience for Christmas

dragon11Last Saturday, we attended a fun and informative workshop on distilling bourbon. The location was Dragon Distillery in Frederick, Maryland. We quickly discovered that the owner Mark T. Lambert is friendly and easily presents the distilling process to small gatherings of participants.

Inside the distillery, Mark used a slide presentation and provided a booklet with the slide presentation; luckily there was no need to take extensive notes. Attendees participated in activities that included pouring the mash into a large stainless steel tank and stirring so it would not lump together.

Mark offers three workshops. We only attended the first workshop which lasted about 3 hours. Other workshops are longer and include additional information.

If you are still shopping for the perfect gift for a  whiskey/bourbon enthusiast, you will want to consider signing someone up for one or all three of the workshops. The one day (3-hour) workshop includes information about the equipment, mashing, fermentation, filtration and more. The 3-day workshop lasts 7 to 8 hours and includes much more.

Each participant receives a small charred oak barrel filled with moonshine that is ready for aging. Age it long enough and you can call it bourbon. The moonshine was distilled from a mash of approximately 87% corn and 13% malted barley.

The cost for these workshops starts at $115 for the 3-hour class.

Message on a Bottle

When family is split residing in Oregon, Ohio and Maryland, it is difficult to bring everyone together. Thanksgiving 2016 was the first time in four years that we were all together meeting in Portland, Oregon. Kathy and I spent a few days visiting wineries and vineyards in Southern Oregon and had a good supply of Tempranillo for the holiday meals. On Thanksgiving Eve, our daughter Meghan and son-in-law Andy slipped in a bottle of wine they had purchased at a winery along Lake Erie North Shore in Ontario, Canada. Meghan and Andy have written articles and taken photos for the Wine Trail Traveler site. Lake Erie North Shore is a favorite destination.

I noticed the top of the bottle and first saw the letters VQA along the screw cap. VQA Ontario is the regulatory agency assuring the quality of the wine. What I didn’t pick up on right away was the front label on the bottle. Rather than a message in a bottle, Meghan and Andy had a message on the bottle, the front label. “We’re expecting our bundle of joy baby Neumeier due June 2017.” What a wonderful way to send a message, when the whole family is present. Before the wine was opened, there were hugs and congratulations.

Wine is always a wonderful gift. It also can become a target for one’s creativity. At their wedding, there were bottles of wine, also with creative labels. The wines were to be opened at different anniversaries such as 1st, 5th, 10th etc. Guests at the wedding reception signed the bottles with a silver inked marker. This is a wonderful creative way to bring back memories of their wedding. But I think they outdid themselves this time with a message on a Chardonnay bottle. Congratulations Meghan and Andy.

Wine and food pairing at St. Francis Winery & Vineyard

The recipe below for Cassoulet is from St. Francis Winery & Vineyards in Sonoma, California. The recipe calls for one cup of a dry red wine. This recipe is a good idea for the cold winter weather that is quickly approaching.

Cooks will want to read this recipe before beginning. It is a long process that begins with soaking the beans overnight.

Cassoulet

Ingredients

• 1½ cups cannellini beans
• 2 duck confit duck legs, picked of all bones
• 8 ounces fresh lamb sausage
• 6 ounces smoked bacon, diced large
• 1 yellow onion, diced small
• 1 carrot, peeled diced medium
• 1 stick celery, diced medium
• 2 cloves chopped garlic
• 2 tablespoons Italian parsley, chopped
• 1 tablespoon fresh thyme, chopped
• 1 quart roasted chicken stock
• 1 bay leaf
• 1 cup dry red wine
• 1 cup bread crumbs
• ½ cup parmesan cheese
• Salt and black pepper to taste

Directions

  1. Place the beans in a bowl, cover with water and soak in the refrigerator overnight.
  2. Heat a sauce pot over medium heat and add the bacon. Cook stirring often until crispy (about 10 minutes).
  3. Add the chopped onion and sweat until translucent (about 5 minutes).
  4. Drain the beans and add to the bacon and onion mixture.
  5. Add a bay leaf and enough chicken stock to cover the beans by about 1 inch.
  6. Cook the beans until tender but not blown out (about two hours).
  7. Cool the beans in a shallow pan in the fridge.
  8. Preheat oven to 350°F. Grease a 9×9 baking dish with butter.
  9. Place a sauté pan over medium heat and add a drizzle of extra virgin olive oil. Add the lamb sausage and brown.
  10. Add the carrots and celery, allow to sweat for 5 minutes.
  11. Add garlic, thyme and parsley and cook for 1 minute.
  12. Deglaze the pan with the red wine and cook until reduced by half.
  13. Add the lamb mixture to the beans and season with salt and black pepper. Mix all of the ingredients thoroughly. If the mix appears dry add a little chicken stock to ensure a moist cassoulet.
  14. Place the mixture in the buttered baking dish and cover with the bread crumbs and parmesan cheese. Cover with foil and place in the pre-heated oven.
  15. Cook the cassoulet for about 45 minutes or until the edges begin to bubble. Remove the foil and cook until the breading is browned. Remove from the oven and let cool 10 minutes before serving.

A few weeks ago, we received two wine samples from the Little Black Dress wine company. These wines were fun and affordable.

The Little Black Dress Rosé was produced with grapes from California. Grape varieties used in production of this Rosé included: Gewürztraminer, Muscat, Chardonnay and Zinfandel.

The wine was a light pink color with an orange hue. The aroma was faint with hints of flowers, white peaches, raspberries and spice. The wine offered a taste of white peaches, roses and tropical fruits. The crisp finish was yummy. The wine was slightly sweet with 18.0 grams/l of residual sugar. The wine was 12.5% alcohol. The winery suggests that this wine is delightful to pair with light summer dishes  including salads, fish, grilled meats and fresh cheese. The wine is also suggested for an aperitif.

The second wine from Little Black Dress was the Diva Red. The grapes were sourced from California and include several varieties including: Zinfandel, Tannat, Mourvedre, Garnacha, and Malbec. The Diva Red was a translucent dark ruby color. The aroma was of black fruits. The taste offered notes of blackberries, and black raspberries with a hint of leather, earthiness and baking spices. The wine was dry and medium-bodied. The finish was fruity and long. Wine pairing suggestions included meat dishes and spicy cuisine. This wine may be enjoyed as an aperitif.

The Little Black Dress wine company was founded in August 2006. The name seeks to create a relationship to the idea that the little black dress is perfect for accessories and that one can accessorize with the Little Black Dress wines. It is certainly a creative idea.

Little Black Dress wines include an assortment of wines. Look in your local stores for other LBD wines including Chardonnay, Pinot Noir, Cabernet Sauvignon, Merlot, Pinot Grigio and Moscato. The winemaker for Little Black Dress wines is Margaret Leonardi from Northern California. Her philosophy for crafting wine is summed up in this comment on the lbd wines website, “I aim to make wines that are approachable, affordable, and delicious. This means creating wines that can be appreciated while curling up on the couch to watch The Bachelor on Monday evenings, hanging out with your girlfriends on Wednesday nights, flirting on date nights, or relaxing on Friday evenings at home over dinner with friends.”

Chardonnay is a wine that I like when I have not had it for several months. While planning to make a seafood paella for dinner, I searched my wine room for a white wine. I knew I wanted to put a splash or two of wine in the paella. For me, one of the best white wines to cook with is Chardonnay. I chose an East Coast Chardonnay from Unionville Vineyards in Ringoes New Jersey. The 2012 Pheasant Hill Chardonnay proved to be a winner.

The yellow colored wine had an apple and caramel aroma. The full bodied wine was smooth and offered apple, citrus and caramel on the taste. The finish was crisp with a nice blend of fruit and oak influences, Even though we had tomatoes in the paella, this wine played well with the base and the fish in the paella. Kathy, who generally is an ABC, Anything But Chardonnay, wine drinker, enjoyed this Chardonnay. The oak influence was subtle and the fruit was forward. The wine was simply yummy.

We visited Unionville Vineyards in 2007 and again in 2014. During our visit we met Cameron Stark and energetic winemaker that doesn’t mind hopping between barrels. For those that doubt the wine coming from the East Coast, Unionville Cellars had a wonderful Chardonnay from the Pheasant Hill Vineyards.

Long Island Winery Collecting Toys for Tots

clovispoint5Clovis Point Vineyard & Winery on Long Island is accepting toys for the well-known TOYS FOR TOTS organization until Saturday, December 10. Wine enthusiasts and visitors are encouraged to drop by the winery tasting room with a new and unwrapped toy.

The collecting of toys for TOYS FOR TOTS will end with the winery’s 2016 Holiday Open House  scheduled for 3 to 7pm.

Clovis Point Vineyard & Winery’s website explains the TOYS FOR TOTS mission. “The mission of the U. S. Marine Corps Reserve Toys for Tots Program is to collect new, unwrapped toys during October, November and December each year, and distribute those toys as Christmas gifts to less fortunate children in the community in which the campaign is conducted.  The primary goal of Toys for Tots is to deliver, through a new toy at Christmas, a message of hope to less fortunate youngsters that will assist them in becoming responsible, productive, patriotic citizens.”

This year while visiting wineries in Paso Robles, our itinerary included a stop at Justin Vineyards & Winery. It is a large winery and vineyard in San Luis Obispo County.

Appetizer Ideas for the Holidays

During all of the many holiday celebrations at this time of year, appetizers and hors d’oeuvres are especially delightful to have on hand for friends and family. Below is a recipe from J Vineyards & Winery in Healdsburg, California. This recipe calls for 2 tablespoons of Pinot Noir.

Wild Mushroom Duxelles

Ingredients:

Mushroom Mixture:
1 pound Shiitake mushrooms, diced (remove stems)
2 tablespoons extra-virgin olive oil
2 teaspoons fresh thyme, finely chopped
3 cloves garlic, finely diced

Sauce:
2 shallots, peeled and finely diced
2 tablespoons unsalted butter
2 tablespoons J Pinot Noir Robert Thomas
1 tablespoon balsamic vinegar
Juice of 1 lemon
½ cup creme fraiche
salt and pepper to taste

Method:

1. Preheat oven to 400°. Toss mushrooms in a bowl with olive oil, thyme, and garlic. Transfer to sheet pan large enough to hold the mushrooms in one layer. Roast uncovered for 20 minutes. Stir every ten minutes.

2. Saute the shallots in butter over medium heat until nicely browned.

3. Add the Pinot Noir and reduce for 30 seconds. Remove pan from heat and add vinegar and lemon juice.

4. Add roasted mushroom mixture to shallot mixture. Return to stove top at medium heat, add creme fraiche. Mix well, cook for 2-3 minutes. Season to taste.

5. Brush the bread slices with olive oil and toast for 7-8 minutes. The center of bread should be soft to the touch when done. Spoon the mushroom mixture over the bread slices and serve warm or room temperature.

Duxelles are a mixture of mushrooms, shallots, and herbs slowly cooked in butter. It’s used to flavor sauces, soups, as well as served on its own. The earthy flavor of the mushrooms lends itself nicely to the fruity and sometimes spicy flavors of Pinot Noir.
