Two Dessert Ideas for Valentine’s Day!

If you have waited to the last minute to cook a special dessert, you may want to consider opening a bottle of Ice Wine to sip.  Enjoy it perhaps in front of a fireplace or in a candlelit room.  If you have some time to spend in the kitchen, another idea  is the recipe below for Roasted California Bartlett Pears with Cinnamon and Wine. In addition to  pears the recipe calls for honey, brown sugar, red wine, cinnamon and glazed almonds. This week I noticed that pears seem to be reasonably priced compared to other fruits, so this may be an ideal time to make this dessert. This recipe was provided by California Pears.

Roasted California Bartlett Pears with Cinnamon and Wine

Ingredients

6 fresh California Bartlett pears, cut in quarters and cored
1/4 cup honey
1/4 cup light brown sugar
1/4 cup dry red wine
1 tsp ground cinnamon
Glazed Almonds, for garnish (recipe follows)

Directions

1. Place pears in 9- by 13- by 2-inch glass baking dish.
2. Mix honey, brown sugar, wine and cinnamon together in small bowl. Spoon over pears and toss gently until coated.
3. Bake at 400° F for 20 to 30 minutes or until tender.
4. Spoon into individual dessert bowls. Sprinkle Glazed Almonds on top. 

Glazed Almonds: In small bowl, beat 1 egg white until foamy. Stir in 1 package (6 ounces) sliced almonds until well coated; remove almonds and drain. Toss with 1/3 cup granulated sugar. Spread in single layer and well separated on lightly oiled baking sheet. Bake at 300° F, turning frequently with spatula, until golden brown and caramelized, about 12 to 15 minutes.

7th Annual Pebble Beach Food & Wine Event

The 7th Annual Pebble Beach Food & Wine Event takes place from April 10-13 in Monterey, California. This event is presented by Food & Wine and features culinary delights and many wines.

The Pebble Beach event supports three area groups including the Boys & Girls Clubs of Monterey County, Voices for Children CASA of Monterey County and the Pebble Beach Company Foundation.

Ticketed events include:

  •  A Celebrity Chef & Winemaker Golf Tournament (April 10)
  • Opening Night Reception (April 10)
  • An array of cooking demonstrations
  • Numerous wine tastings
  • A variety of cuisines for lunches and dinners

Prices for events vary from $100 and up. Tickets are available online.

Even if you cannot attend the Food & Wine event, be sure to check out the charities that the festival helps to support. Perhaps you will decide to make a donation.

Braised Baby Artichokes-Roman Style

This recipe for Braised Baby Artichokes-Roman Style includes a link to a video by Ocean Mist Farms that explains how to prepare baby artichokes for cooking. Ingredients include 1/2 cup of white wine.Enjoy!

Ingredients16-24 Ocean Mist Baby Artichokes, rinsed & trimmed

1/3 cup olive oil
3 garlic cloves, minced
1/2 cup white wine
2-3 tablespoons lemon juice

Directions

1. In large skillet or saucepan over medium-high heat, heat oil; add garlic and cook and stir about 3 minutes.

2. Add baby artichokes and cook and stir until beginning to brown at edges, about 5 minutes.

3. Add wine and lemon juice. Cover and simmer until artichokes are tender, about 5 to 8 minutes. Lift out artichokes and set aside.

4. Increase heat and boil until liquid in pan is reduced to just a few tablespoons.

5. Spoon reduced liquid over artichokes before serving.

Yesterday, I wrote about the challenge of pronouncing and spelling Georgian wine grapes. Often, a bottle of wine will have the name of the grape or blend of grapes on it. At times though, rather than the grapes’ names, you will have the name of the appellation. Think of a wine label that has the name Chablis. In France, Chablis is a town, a geographical location. Chablis is also an appellation d’origine contrôlée (AOC) and refers to the town of Chablis and the surrounding vineyards. A wine from this area called Chablis is made from Chardonnay grapes. It is something that wine enthusiasts learn somewhere along their wine journey.

In Georgia, appellations also refer to geographical areas and the surrounding vineyards. The name of the appellation also appears on the wine bottle label. People learn what grapes are in the wine that can use that appellation name on the label. A white wine with the name Tsinandali on the label, is a blend of Rkatsiteli and Kakhetian Mtsvane from Tsinandali. Conference attendees who attend the 6th annual International Wine Tourism Conference in Tbilisi on March 29th and 30th may have an opportunity to drink a red wine called Mukuzani. This is not a name of a grape, but the name of an appellation. A wine with the name Mukuzani is made from Saperavi grapes grown in the town of Mukuzani or surrounding villages.

For Some, Georgian Wine Grapes Are a Challenge to Pronounce and Spell

As Kathy and I travel to wineries and vineyards throughout the world and hear about their story and wine journey, we take notes. These help us to write articles. When it comes to grapes grown in vineyards or varieties in wines, we have personal abbreviations for the international grapes. It helps us to take notes faster. Our first trip to Georgia, however, was different. Other than Cabernet Sauvignon, Chardonnay and Muscat, we did not run into other international grapes.

We were familiar with the Georgian varietal grapes Rkatsiteli and Saperavi. Both varieties are grown in the United States. There is a Georgia, United States connection. Dr. Frank managed vineyards in the country Georgia prior to coming to the United States and eventually planted vineyards and made wine along Keuka Lake in New York’s Finger Lakes wine region. One of the grapes he planted in New York was Rkatsiteli. We experienced Saperavi at another Keuka Lake winery.

Kathy and I were not familiar with the other varietal grapes we encountered in Georgia. White grapes had names such as: Chinuri, Goruli Mtsvane, Khikhvi, Kisi, Krakhuna, Kudurauli, Mtsvane, Tsitska and Tsolikouri. Of that group we did have a Georgian Kisi at the 2013 International Wine Tourism Conference in Zagreb, Croatia. Kisi is the easiest Georgian grape to pronounce and spell. Red grapes are often referred to as black grapes and have names: Aladasturi, Aleksandrouli, Budeshuri, Dzelshavi, Kapistoni, Mujurentuli, Otskhanuri Sapere, Shavkapito, Tavkveri and Usakhelouri. These are just a few of the more than 500 grape varieties in Georgia. They are the ones that most of the wines are made from.

IWINETC Media FAM Group

We discovered that taking notes while on a winery tour was a challenge. I created a crib sheet for our media group that will attend the 2014 IWINETC in Tbilisi. You can carry the small laminated sheet with you and reference the spellings of the more common varietal grapes we will encounter while on tour. I numbered each grape so you could just use numbers if you want to speed up note taking. I’ll also post a pdf version of the crib sheet for all attendees going to the International Wine Tourism Conference in Tbilisi, Georgia. The conference will afford a great opportunity to taste wines other than those made with international varieties. For those writers, the conference will give you practice writing words that you are not familiar hearing or spelling.

Anna de Codorniu, from the D.O. Cava – Penedés region of Spain, has released a new image for their Brut Rosé Cava and it’s perfect for Valentine’s Day or any time you want to add elegance to your day.

We received a bottle of Anna’s Brut Rosé last week and decided to wait to enjoy it over the weekend. The new stylish bottle has a glimmering, opaque, light pink covering.

While pouring the sparkling wine, a large head formed on the top and was tantalizing. The Pinot Noir and Chardonnay blend was a reddish color with an orange hue. The aroma offered hints of cranberries and strawberries. The taste was dry and crisp with notes of  cherries and cranberries. The sparkling wine offered an aftertaste of strawberries. We enjoyed the wine as an apéritif.

A Northern Virginia winery tasting room is celebrating Super Bowl Sunday on Saturday and Sunday. Pearmund Cellars has designed a Wine Bowl for Saturday and Sunday from 10am til 6pm.  This is Red Wine Team vs. White Wine Team Super Bowl Weekend.

The winery wants you to bring a group of friends to celebrate Super Bowl Weekend. According to the winery website, “Will the red wine team or the white wine team win the wine bowl? It’s up to you. If your vote scores the winning touchdown, you win!”

Tailgating

Participants can bring their very own food snacks. The winery will also have chili, a glass of wine and crackers for $15 per person. Just think of the fun you can have in the warmth and friendliness of a tasting room compared to sitting in the cold stadium in New Jersey.

Sunday Special: Wear a Sport’s Jersey

On Sunday, February 2 guests are invited to wear their favorite sport’s jersey. They will receive a special price on one tasting or one glass of wine.

Pearmund Cellars is located in Broad Run, Virginia and therefore is easily accessible to people in the District of Columbia.

This is a great idea for those who don’t have a ticket for the game.
