Online Lectures from the Cool Climate Oenology and Viticulture Institute

Brock University in Ontario, Canada has a Cool Climate Oenology and Viticulture Institute (CCOVI.) This research-based institute focuses on cool climate viticulture, wine culture and wine business. Recently the CCOVI has put a lecture series online as a slide presentation and video.

Currently the archived files are from 2008 thru March 2, 2011. The most recent was “The future of Canadian wine exports: lessons learned and learning from the best.” Other 2011 archived lectures include “What does it take for local restaurants to promote local wines?” and “Climate change in Ontario’s wine regions: the good and bad news.”

The 2011 lecture series will continue with many interesting vides/slide presentations including “Super-tasters, winemakers and other freaks: the taste genetics of alcoholic beverage behavior,” and “The pricing of organic wines.”  The last lecture takes place on April 28 and is entitled “Memory in a bottle? Heritage, identity and wine in Niagara.”

The current schedule is available online.

It is very commendable that Brock University’s Cool Climate Oenology and Viticulture Institute is offering these lectures as videos and slide presentations to the general public. We can only hope that other universities will consider following their example.

B.R. Cohn Winery Supports Charities with Two Special Events

The B.R. Cohn Winery & Olive Oil Company offers an annual concert and a classic car event that benefit local charities and veterans groups. The owner, Bruce Cohn, originally the manager of the Doobie Brothers, has been interested in supporting charities that benefit children, veterans and local communities.

Plans are underway to have the 3rd Annual B.R. Cohn Charity Car Classic event on July 3, 2011. Enjoy classic cars, food, wine and music while benefiting charity.

Bruce established the B.R. Charity Concert and in 2011 it will be celebrating its 25th Anniversary in September 2011. In the past the B.R. Charity Concert has included performances by the Doobie Brothers, Willie Nelson, David Crosby, Graham Nash and many others.

The concert is located on the B. R. Cohn Winery site in Glen Ellen, California. The Charity Concert will take place from September 23-26, 2011. If you enjoy wine and music, this will make a perfect reason to visit B.R. Cohn Winery.

Curried Chicken with a Little White Wine Recipe

Curried Chicken Salad with Marionberries

Serves 4

Ingredients

1 lb boneless skinless chicken breasts (approximately 3 chicken breasts)
1 T of olive oil
Salt and pepper to taste
1/3 c reduced fat mayonnaise
1 T dry white wine
2 T mango chutney
½ T curry powder
¼ T lemon juice
¼ t ground ginger
1 green onion chopped
1 celery stalk chopped
¼ c raisins
2 c fresh or frozen Marionberries
½ c roasted salted cashews

Directions

  1. Heat olive oil in nonstick cooking pan, add chicken breasts and sauté for 5 minutes turn over and sauté for 5 more minutes or until done.
  2. Season to taste with salt and pepper.
  3. Remove from pan and cool in refrigerator for 20 –30 minutes.
  4. Cut meat into ½ inch cubes.
  5. Combine mayonnaise, wine, chutney, curry powder, lemon juice and ginger in a large bowl.
  6. Add chicken onions, celery and raisins and fresh or frozen Marionberries; toss to coat.
  7. Season with salt and pepper.
  8. If using frozen berries allow salad to sit in refrigerator for ½ hour before serving.
  9. Immediately before serving add cashews.

Serve on a bed of lettuce or in pocket bread.

Battle of the Three Pinots from France, New Zealand and Oregon

On my 60th birthday friends and family gathered for a blind wine tasting. Since we were in Portland, Oregon it made sense to taste Pinot Noirs. Three Pinots were purchased in the same price range for the blind tasting. While at Zupan’s in Portland, I decided on a price range of $22 to $25. All Pinots were from the 2007 harvest. The French Pinot was a Bourgogne Rouge Pinot Noir Cuvée Gérard Potel 2007, while the New Zealand Pinot Noir was from Whitehaven. The 2007 Pinot Noir from Oregon was from Aubin Cellars Momtazi Vineyard.

For the tasting the wines were served in good quality crystal. All the stemware had a wine charm at the base so the glasses could be identified. The wines were poured in a different room. For the second wine pour, a small amount of the second wine was poured into the glass, swished and dumped before the second wine tasting was poured. The same was done before serving the third wine.

Scoring was a simple 1 to 5 for five different categories. The first four categories were typical structured tasting categories: sight, aroma, taste and finish. The fifth category was personal purchasing category ranging from one point for “I would never purchase that wine” to five points for “I would purchase the wine and serve it to guests.”

There were different opinions of all three wines and each wine had a distinctly different profile. The group wanted to guess where the wines were from before revealing the identity of the wines. Everyone in the group liked the third wine served and all but one theorized that the third wine was from France. Thinking was along the lines that since France is known for producing great wines the third wine must have been from France. However one taster theorized that the third wine was from Oregon and thought the French wine was the lowest scoring wine. He theorized that since France makes great wines, at the price point of the low to mid twenties the French wine would be lower scoring than the others.

The group was surprised by the results. The lowest scoring wine was from France. The wine in the middle scoring was from Oregon and the highest scoring wine was Whitehaven in the Marlborough region of New Zealand. The group was certainly impressed with the New Zealand Pinot Noir. Later in the event when matching the wines with cheeses and meats, it was noted that the French Pinot Noir was overpowered by Gouda while the New Zealand Pinot was able to hold up to the cheese.

Blind tastings are easy to conduct and add a degree of mystery to the tasting. All participants had a good time and were surprised by the results. Even for those living in Oregon, New Zealand Pinot Noirs are now on their radar.

Maryland Direct Wine Shipping Legislation- March 4

This Friday, March 4, both Maryland legislative bodies will be considering wine shipping legislation. Currently, Maryland does NOT allow wineries in state or out-of-state to ship wine directly to consumers. The legislation to change the current law will allow Maryland to join more than 30 other states that allow direct wine shipping to consumers. Don’t wait until Friday to voice your opinions to your legislator. Contact them early this week! Your opinion counts!

The Maryland Wine website includes the following information on their website.

MARYLAND WINERIES NEED YOUR SUPPORT

“After years of gaining support in Maryland’s General Assembly, we are closer than ever to passing a law to allow Maryland citizens to receive wine by mail from wineries and wine-of-the-month clubs.

We are asking you to call or email your legislator before Friday, March 4 (the day both bills will be heard by the respective legislative committees in Annapolis) to show your support for direct-to-consumer shipment of wine.

Even with the overwhelming support of a majority of the legislator, there are interest groups hard at work to cripple the bills, trying to limit WHICH wines can be shipped, and from WHICH sources (wineries/retailers, etc.).

Please let your legislators know that you want:

– a law based on national standards and the Comptroller’s Study on Direct Shipping;

– a law that allows you to receive wine from wineries and retailers;

– a law that lets Maryland wineries ship to other states (like NY, which will only let MD wineries ship in if

MD’s law is based on national standards).

Salmon, Blackberries, White Wine Recipe

For this weekend, try this recipe with white wine, blackberries and salmon. Directions include a delightful way to serve this entree.

Salmon With Blackberry Hollandaise

Serves 4

Ingredients

For Hollandaise:
4 egg yolks
2 Tbl. fresh lemon juice
1 1/2 sticks sweet butter (12 oz.)
Dash salt, white pepper

For Blackberry Sauce:
2 cups blackberries
1 tsp. Dijon mustard
1/2 tsp. garlic, minced
1/2 tsp. shallot, minced
1 lemon, juiced
3 Tbl. Madeira wine

For Salmon:
1 lemon, quartered
Fresh mint
2 cups white wine
3 cups fish stock
(4) 6 oz. Salmon fillets

Directions

For Hollandaise:

  1. Whisk egg yolks and lemon juice in top pan of double boiler. Place pan onto double boiler. (Water in bottom of double boiler should be simmering, and not touching top pan.)
  2. Whisk continuously until sauce just begins to thicken.
  3. Remove from heat and slowly pour melted butter in steady stream, continuing to whisk until all butter is incorporated.
  4. Add salt and white pepper.
  5. Set aside.

For Blackberry Sauce:

  1. In small saucepan, combine blackberries (reserving some for garnish), mustard, garlic, shallot, lemon juice and Madeira.
  2. Reduce by one-fourth, stirring often to keep from scorching.
  3. Puree in a food processor; pass through a fine sieve. Set aside one quarter of the reduction for garnish.
  4. Fold the remaining portion into the 4-egg hollandaise.

For Salmon:

  1. In a fresh saucepan, combine quartered lemon and one sprig of mint with white wine and fish stock. Bring to a boil, then reduce to simmer.
  2. Using a spatula, carefully place the salmon fillets in saucepan, and poach for 8-10 minutes.
  3. Remove fillets with spatula so that they retain their shape.
  4. Spoon some Blackberry Hollandaise into the center of each serving plate, then drizzle a thin circular line of reserved puree. Lightly draw the back of a spoon across it, making a scallop effect toward the outside of the plate.
  5. Place a salmon fillet in the circle and garnish with mint flowers or borage flowers and 3-5 whole blackberries.
