What to Do with All the Leftover Turkey!

112715aThe day after Thanksgiving many refrigerators will be filled with leftovers. If your family is like ours, just heating up the leftovers today doesn’t quite do it. However, there are tons of ideas for leftover turkey.

If you have a good size portion of turkey left, freeze it. In a few weeks, when you have a craving for roast turkey, thaw the turkey and make a simple herb dressing. When making the dressing, add a splash of white wine. Put the finished dressing in a baking dish, cover with turkey and top with a slightly diluted can of cream of celery soup. Bake for about 45 minutes and you have a simple but delicious, tummy warming dinner.

Braised Turkey in Red Wine with Sweet Potatoes & Red Cabbage
Chef Su Jin Yoo: The City Tavern, Philadelphia, PA

Ingredients:

2 Cups: dry red wine
2 Tablespoons: dry cherries
2 Sticks: cinnamon
2 Pounds: TURKEY BREAST, trimmed & cut into cubes
As needed: salt and freshly ground black pepper
As needed: vegetable oil
8 Ounces: red onion, chopped fine
2 Cloves: garlic, minced
1 Cup: TURKEY STOCK
1 Pound: sweet potatoes, peeled and cut into cubes
1 Teaspoon: ground cinnamon
1/4 Cup: dried cherries, pre-soaked in water and drained
1 Tablespoon: unsalted butter
1 Teaspoon: sugar
As needed: salt and freshly ground black pepper
As needed: vegetable oil
6-Ounces: onion, thinly sliced
1 Pound: red cabbage, shredded
1 Clove: garlic, finely diced
4 Ounces: tart apple, peeled and thinly sliced
1 Cup: TURKEY STOCK
As needed: salt and freshly ground black pepper

BRAISED TURKEY

1. Combine red wine, cherries and cinnamon sticks. Reduce the wine by one-half.
2. Season the turkey with salt and pepper.
3. Over medium-high heat, heat enough oil in a pan to film the bottom. Sear turkey to a deep brown on all sides.
4. Remove turkey and reserve.
5. Add onion and to the pan and cook until golden brown. Add garlic and cook until fragrant.
6. Return turkey cubes to pan. Add turkey stock and red wine reduction.
7. Bring to a gentle simmer over low heat, braising for about 40 minutes .
8. Adjust seasonings with salt and pepper.

MASHED SWEET POTATOES with DRIED CHERRIES

1. Cook cubed potatoes in water until tender enough to easily mash.
2. Add cinnamon, cherries, butter and sugar. Season with salt and pepper to taste. Mix well.

BRAISED RED CABBAGE

1. Heat oil in a sauté pan, add onions. Sauté until they begin to turn translucent.
2. Add red cabbage and garlic and sauté for an additional 5-6 minutes or until red cabbage wilts.
3. Add apple and sauté for 2-3 minutes.
4. Add stock and simmer until almost all liquid is reduced.
5. Season with salt and pepper.

Or try this recipe for Company Turkey Pot Pie

Company Turkey Pot Pie

Ingredients:

1 Tablespoon: canola oil
1/2 Cup: diced sweet onion
1/2 Cup: diced celery
1/2 Cup: diced carrots
1/3 Cup: dry white wine
1 Cup: TURKEY STOCK
1/2 Cup: frozen peas, thawed
1/2 Cup: cleaned and sliced button mushrooms
1/2 Cup: diced red skinned potatoes
1/2 Teaspoon: dried thyme leaves
1/2 Teaspoon: minced fresh garlic
1/2 Cup: heavy cream
To taste: salt and freshly ground black pepper
1 Pound: COOKED TURKEY, shredded
2 Tablespoons: unsalted butter, softened
2 Tablespoons: all-purpose flour
1 (10″ X 15″): Sheet puff pastry, thawed and cut in rounds to fit ramekins
1 Egg: beaten with 1 teaspoon cold water

PREPARATION

Heat oil in a large, heavy skillet over medium heat.

Add onion, celery and carrots. Sauté over medium heat for 3 – 5 minutes or until vegetables are tender.

Add wine to deglaze pan, loosening any browned bits in the skillet.

Add turkey stock, peas, mushrooms and potatoes. Bring to a boil over medium heat.

Add thyme, garlic and heavy cream. Season with salt and pepper to taste.

Bring to a boil over high heat and stir in shredded turkey.

Bring back to a boil. Immediately reduce heat and gently simmer about 5 minutes, stirring often. Heat until ingredients are fully heated.

In a small bowl, combine butter and flour into a paste.

Slowly stir butter-flour mixture into turkey mixture until it is combined and mixture is thickened.

BAKING

Ladle turkey mixture into 8-ounce individual ramekins. Cover each with puff pastry circles, allowing a 1-inch overhang. Crimp pastry to edge of the bowl.

Using a fork, gently prick pastry to allow steam to escape, being careful not to break the dough.

Gently brush egg mixture over the surface of puff pastry.

Bake in a preheated 350 degree F oven for 12 to 15 minutes, until pastry edges are brown.

Thanksgiving in Wine Country

112615aOur last few days were spent in the Willamette Valley where signs of autumn abounded. Although most vineyards shed their leaves, the fifty-year old vines at David Hill Winery showcased bright yellows. On a cloudy day it provided a ray of sunshine. There were pumpkins at every winery we visited. The pumpkin that caught my attention as symbolic of Thanksgiving in wine country was at Youngberg Hill Vineyards and Inn in McMinnville. Painted on the pumpkin was a wine bottle, glass of wine and bunch of grapes. What better way to say Happy Thanksgiving?

Spending Thanksgiving in Oregon provides a wonderful opportunity for pairing traditional Thanksgiving foods and Oregon wines. While in the Willamette Valley, we chose a Pinot Gris, Gewürztraminer, and four Pinot Noirs for our family Thanksgiving celebration. With those wines we have most of the day set for food and wine pairings.

We have been privileged to bring everything we’ve learned to the general public through our website and also published three books.

We are so very thankful to all the people we have met and the time they have spent with us, and  also our families who understand our passion for wine and encourage us in our endeavors.

Spiced Cranberry Brew from DELEÓN® Tequila

image005Just in time for the Thanksgiving holidays, PMK·BNC, a marketing firm representing DELEÓN® Tequila,  shared this yummy cranberry-inspired recipe. The recipe was inspired by the Hot Toddy that was developed in the first half of the 1800s. The Hot Toddy was considered a cure for ailments.

This modern recipe is from DELEÓN®. “DeLeón®’s Spiked Cranberry Brew is a modern version of this ‘medicine,’ turned upside-down with a sophisticated brew of hot, tart cranberry juice, fresh lemon, and peeled pear – all spiced to perfection with cinnamon and nutmeg.” It is suggested that the Spice Cranberry Brew is a “cure” for a cold winter’s day.

Spiced Cranberry Brew

Ingredients

1 ½ oz. DeLeón® Platinum Tequila
6 oz. hot cranberry batch (1 part fresh unsweetened cranberry juice, ¾ part fresh lemon juice, ¾ part simple syrup, cinnamon clove and nutmeg to taste)

Directions

Simmer together ingredients for hot cranberry batch. Combine hot cranberry batch with DeLeón® Platinum Tequila in glass mug. Garnish with a thin pear slice dusted with cinnamon.

Segura Viudas Brut, A Very Nicely Priced Cava for the Holidays

112015aWe received a sample bottle of Segura Viudas Brut. Last night we enjoyed the Segura Viudas Brut cava with extended family. The meal was paired with a dinner of Portland-style sockeye salmon and numerous oven grilled vegetables including carrots, squash and chard.

After a toast to family, we sipped the Sequra Viudas Brut and enjoyed the crystal, light yellow colored cava which offered long lasting multiple beads of small bubbles. The bubbles formed a mousse on the surface along the circumference and in the middle.

The cava had green apple aroma notes with a taste of green apple and yellow stone fruit. The finish was crisp and fruity yielding to mineral nuances.

One of the dinner guests noted that, “This cava is way too good for $10.00.” On the other hand, I think it’s great to have an affordable cava that can be enjoyed frequently rather than just for special occasions.

The Segura Viudas cava was a blend of Macabeo, Parellada and Xarello. The cava had 11.5% alcohol. Segura Viudas recommends enjoying this sparkling wine as a beginning to dinner or paired with pasta dishes, soft cheese including Brie, pizza, prawns or grilled chicken. The brut cava can also pair with scallop linguine, Brie or smoked sockeye salmon. It was an excellent pairing with our sockeye salmon on a bed of chard.

About Segura Viudas

Segura Vivudas is located in the Penedés region of Spain. The property had a watchtower in the 11th century. By the 13th century, the tower had been renovated into a Catalan country house. The property included crops plus wine grapes. It was in the middle of the 1800s that sparkling wines were crafted. In the 1980s the Ferrer family of Barcelona purchased the estate. Today current production includes: Brut, Rosé, Extra Dry, Gran Cuvée Reserva and Reserva Heredad.

Are You Celebrating Beaujolais Nouveau Day?

Celebrate Beaujolais Nouveau Day today! November 19! Beaujolais Nouveau has an unusual history. Traditionally the Beaujolais Nouveau  wine release was an opportunity to celebrate the end of harvest. It is also based on the concept of releasing a wine before its time, without intense aging. Behind the story is also the idea that winemakers of Beaujolais wines wanted to let potential buyers (distributors) know about their relatively new wines and what the vintage wine would offer in the future. Since the wine does not have extended aging, the quality is at its best now.

The marketing concept is one that appears to have paid off, at least in terms of bringing attention to a wine variety’s popularity. Beaujolais Nouveau is produced with the Gamay grape variety. (Wine enthusiasts will want to know that a white Beaujolais is produced with Chardonnay.)

Excitement abounds over the next few days with the celebration of Beaujolais Nouveau Day. If you are planning to try a Beaujolais Nouveau 2015, be sure to try it soon as Beaujolais Nouveau wines are considered best during the next few months.

The Beaujolais Nouveau Day website offers a tremendous amount of information about Beaujolais Nouveau. “The wine actually originated about a century ago as a cheap and cheerful drink produced by locals to celebrate the end of the harvest season. Perhaps the most well-known producer of Beaujolais Nouveau is Georges Duboeuf, who is credited as one of the marketing geniuses behind the wine. Selling this young red was viewed by some vintners as a means to clear large quantities of wine at decent profits, which would create a much-needed cash flow shortly after harvest.”

According to the website, approximately 120 festivals in the Beaujolais region are related to Beaujolais Nouveau.

The most renowned event is the Les Sarmentelles in Beaujeu. This festival is five days long and has wine tasting, live music and dancing. A parade takes place in the evening and later at midnight fireworks announce the release of Beaujolais Nouveau.

Beaujolais Nouveau wines are shipped around the world and available on November 19 to consumers.

It’s already November 17 and Thanksgiving Day in the United States will be here before we know it! Have you purchased your turkey yet? If you have never roasted a turkey before, you will want to check on how long the turkey needs to thaw before roasting. It can take a lot longer than one might think. Check with the National Turkey Federation for tips on buying, thawing and roasting a turkey. The website even has recipes for all the turkey that is leftover.

Below is a recipe from the National Turkey Federation for Wine Country Roasted Turkey and as might be expected, the recipe calls for rosé wine.

Wine Country Roasted Turkey
Honeysuckle White

Ingredients

WHOLE TURKEY, fresh or thawed if frozen: 1 – 12 to 15 pound
celery, cut in half: 2 Stalks
onion, cut in quarters: 1 Small to Medium
rosé wine, divided: 1 Cup
unsalted butter, divided: 1/2 Cup
orange juice: 1/4 Cup
lemon juice: 1 Tablespoon
seasoned salt: 1 Teaspoon
ground paprika: 1/2 Teaspoon
onion powder: 1/4 Teaspoon

Directions

1. Preheat oven to 325 degrees F. Wash turkey in cool water and pat dry with clean paper towels. Place on a V-shaped rack in a shallow (2 to 3-inches deep) roasting pan.

2. Place celery, onion and 1/2 cup wine in body cavity. Sprinkle body cavity with salt and pepper.

3. Using twine, tie legs together over cavity. Tuck wings under or skewer against sides of bird. Brush bird with 1/4 cup melted butter.

4. Insert food thermometer in inner thigh.

5. Roast uncovered, breast side up, in the preheated 325 degrees F oven for 1 hour.

6. Meanwhile, in a small bowl, combine remaining melted butter and wine with orange and lemon juices, seasoned salt, paprika and onion powder. Use to baste turkey frequently during remaining roasting time – about 2 to 3 hours.

7. Roasting time varies so be sure to use the food thermometer and roast until the internal temperature of the inner thigh reaches 175 degrees F. If the turkey begins to brown too early, cover breast and top of drumsticks loosely with aluminum foil.

8. Allow turkey to stand for 15-20 minutes before carving

A winery in Ohio, Grand River Cellars, is promoting “Light up the Grand River Valley.” The event is supported by Debonné Vineyards and Grand River Cellars. This is a special decorating contest for the communities of Madison Village, South Madison Township and Harpersfield Township.

This is a great opportunity for those who celebrate Christmas to promote the Christmas theme. Residential winners will also receive a gift certificate and cash.

The contest rules:

  1. Address must be located in one of the three participating communities.
  2. Participants must register their entry by emailing your name, address, and phone number to grcinfo@grandrivercellars.com or info@debonne.com by the 25th of November.
  3. Your house or business must be decorated by November 29.
  4. Lights need to be on every night until January 1.
