Lamb Rag-Out with Cabernet Sauvignon

With cooler weather here or approaching, it’s time to think of warm dishes to create in the kitchen. Below is a recipe for Lamb Rag-Out which uses fresh or cooked lamb, depending on your preference. Some other ingredients you may like include Cabernet Sauvignon (use the left over to pair with the meal) and kalamata olives.

Lamb Rag-Out

Ingredients

1 lb boneless lamb
1 T butter
1 T olive oil
5 garlic cloves, crushed
2 t finely minced rosemary needles
1/2 c Cabernet Sauvignon
14 oz beef broth
3 T tomato paste
4 Roma tomatoes, seeded and chopped
1/4 c kalamata olives, chopped
1 T fresh parsley

Directions

*This recipe is made using raw lamb. It can be made with leftover leg of lamb, chopped into one-inch cubes, which is my preferred method. If using leftover meat, omit browning the meat. Just put all ingredients in a heavy pot and simmer for an hour.

  1. Heat oil and butter. Add lamb in small amounts to brown.
  2. Add garlic and rosemary, cook for one minute.
  3. Add wine and stir, mix in beef broth and tomato paste.
  4. Reduce heat, cover and simmer for 1 hour.
  5. Remove cover, increase heat to medium high and cook until sauce begins to thicken.
  6. Add tomatoes and olives and cook 5 minutes.
  7. Stir in parsley and serve over a bed of noodles or rice.

Pairs well with Milbrandt Vineyards 2008 Traditions Cabernet Sauvignon

Historic Vineyard Society for California Vineyards

One may not quite know what will happen when posting a question on the Internet. Mike Dildine asked, “California’s great old vine Zinfandel vineyards … What are your favorites?” The result was the creation of the Historic Vineyard Society.

Mike’s question prompted others to gather together and eventually start the Historic Vineyard Society which also has a website. “Their goal is to document facts about all of California’s heritage vineyards, and to raise awareness of the unique places these vineyards represent, in California and winemaking history.” In addition the non-profit, 501 C-3, Historic Vineyard Society is concerned with preserving the historic vineyards in California.

Winery owners with vineyards that meet the requirements to be listed on the Historic Vineyard Society registry can locate the seemingly easy form online.

The Historic Vineyard Society helps wine enthusiasts to discover the wineries with historic vineyards by keeping the registry online. Historic vineyards can be found by AVA or the decade planted. When planning a visit to California wineries, consider checking the Registry of Historic Vineyards to discover some historic vineyards to include on your itinerary.
