CorkReharvest Collects Corks at Whole Foods Markets

Yesterday Kathy commented on the collection of wine bottle natural corks by ReCORK by Amorin. Give them a call when you have 15 pounds of corks; that’s 1650 corks. The problem for the general consumer is saving 1650 corks. They may be willing to save a couple, even several but won’t want hundreds of corks laying around their house or apartment. The ReCORK program works well for winery tasting rooms, wine shops, even restaurants. Consumers can take their corks to those places.

If wine consumers frequent a Whole Foods Market, they can deposit their corks (any number) in a CorkReharvest box. There are close to 300 Whole Food Market stores in many communities. On the CorkReharvest.org website I learned that the program was established in 2008 and has already collected billions of natural corks. In addition to Whole Food Market, check grocery stores in your community, restaurants, wine bars and convention and performing arts centers to see if they are collecting corks.

It’s important to note that recycled corks are not used any longer as closures in wine bottles. New cork has to be harvested and made into cork enclosures. The cork industry has improved their manufacturing process and can supply new corks to enclose wine bottles for many decades to come. Meanwhile, used corks can be recycled into a variety of products.

Save Your Corks!

After opening wine bottles with different types of closures, it can be difficult to decide which one I like the best.

Natural cork, synthetic cork, and screw caps are all commonly found in stores and wine tasting rooms. Less usual to discover are Zorks and plastic/glass push in button-like closures.

For me, I really like the traditional natural cork closure at home or a restaurant. However if picnicking or traveling the screw cap would be easier to use.

One of the great things about natural cork is that the trees from which cork is sourced continue living year after year. In terms of recycling, after you have made use of your corks for various art projects including trivets and frames, there is another option, ReCORK by Amorim.

ReCORK is a program for recycling natural wine bottle corks. The ReCORK website notes, ”The goal is to recycle corks and to educate and inform our audiences about the crucial role cork forests play in curbing climate change.” Products made from recycled cork products include floor tiles, sports equipment, auto gaskets, soil conditoner and more.

How successful has ReCORK been? Visit the website and at the top of the page, the number of corks recycled is provided. Next to that is the number of trees planted. This morning the numbers are at: 16,193,110 corks collected and 5,577 trees planted.

Who can participate in the recycling program at ReCORK?

  • Individual consumers
  • Winery tasting rooms
  • Retail organizations
  • Hospitality organizations

Do not send one cork at a time. If you would like to save corks for ReCork, the recommendation is to save 15 pounds of corks. They estimate this amount is about 1,650 corks. Anyone or business with 15 pounds of corks, will be sent a free shipping label from ReCork. Gather together with your friends and neighbors and start collecting corks today!

Tasting rooms, wine shops and grocery stores may want to start a collection center for ReCORK.

Country Singer Releases Red Wine at Nashville Winery

The Winery at Belle Meade Plantation located in Nashville, Tennessee is having a special event this week on Wednesday, May 25 from 5 to 7 pm.

Lorrie Morgan, a Country Music singer is releasing an American Sangiovese wine that is named for Lorrie’s hit song. “Something in Red.” This release is with Morgan’s partnership with the American Heart Association and The Winery at Belle Meade Plantation

Enjoy this exclusive tasting and have the opportunity to meet and greet Lorrie Morgan. Consider purchasing an autographed wine bottle. These will be limited in number.

The winery is the only winery in Nashville and is a nonprofit winery. All profits from the winery go to Belle Meade Plantation for preservation and education.

28th Annual Wine & Roses Charity Wine Tasting in San Diego

Enjoy attending and helping others by attending the 28th Annual Wine & Roses Charity Wine Tasting.

Attending the Wine & Roses event will help charities in San Diego County. These charities included Camp Oliver in Descanso, Bayside Settlement House and the Campership Council.

This year the event takes place on June 12. Tickets are available on the Wine & Roses website. The event takes place at the Westgate Hotel in San Diego. Opportunities to wine cases of wine and other gifts will be included.

Wineries and restaurants donate their time food, wine and time to help support these charities. A range of wineries will be included. Wines available will be from Argentina, Italy, Chile Australia, and California. In addition numerous restaurants are involved in the Annual Wine & Roses Charity Tasting.

I have to admit I’m a little disappointed that as of now no East Coast or Midwest wineries are represented at this event. It would be a nice to have a few wineries across the United States represented at this charity event.

A Risotto Recipe from DelMonaco Winery & Vineyards, Tennessee

We arrived home from our long trip to Tennessee. We took a round about way to Tennessee so we could add some wineries in Virginia and West Virginia we had not yet visited. Many of the review articles are completed and available on the Wine Trail Traveler website review section. Watch for more coming this week. While visiting wineries several were happy to share their recipes. Below is a recipe from DelMonaco Winery & Vineyards in Baxter, Tennessee. This is a delightful winery and will offer visitors a southern style welcome.

Chardonnay and Thyme Infused Risotto with Asparagus and Pan Seared Salmon

Ingredients for Risotto

2 c chicken stock
2 c Chardonnay
2 T butter
1 T olive oil
½ c chopped onion &/or shallot
2 cloves garlic
3-5 fresh thyme sprigs
¼ t Kosher salt
¼ t freshly ground black pepper
1 c Risotto (Arborio rice)
¼ c parsley (optional)
¼ c grated Parmesan cheese (optional)
lemon zest (optional)

Asparagus

Salmon
salt
pepper
olive oil
lemon slice or lemon zest

Directions for Risotto

1.     Warm stock and wine on stove top at med/low heat
2.     Heat butter and oil in large heavy bottom skillet over med-med/high heat
3.     Sauté onion, garlic, and thyme for 3-5 minutes.
4.     Add salt and pepper
5.     Add rice and sauté for about 2 minutes.
6.     Ladle in 1 c of stock/wine to rice at a time. Do not leave the stove. As soon as all liquid is absorbed, add in another cup, and so on and so on. Stir almost constantly with a wooden spoon. The rice will thicken up due to the starch.
7.     Once all liquid is absorbed and rice no longer has a “bite” to it… add in 1/4 c parsley and ¼ c grated Parmesan cheese.
8.     Taste for extra salt or pepper needed. Parsley, Parmesan cheese and lemon zest are optional. Pick thyme stems out before serving

Directions For the Asparagus

Leave in rubber bands and place in boiling salted water until they turn a vibrant green color (about 2 minutes for thin and 4 for thick asparagus) Quickly submerge into ice water bath to blanch. Lay out on paper towels to dry until time to serve.

Directions For the Pan Seared Salmon

Cooking times varies on thickness of salmon

  1. Season with salt and freshly ground black pepper, both sides.
  2. Sear in large skillet with olive oil over med/high heat on each side, Approximately 3-5 minutes on both sides. If you cannot cook through without burning, finish in oven at 350 degrees. Center should still be pink and skin and flesh side should be crisp.
  3. Garnish with lemon slice and/or zest.

Tennessee Wineries

We have spent the last one and a half weeks exploring the Tennessee wine industry. The more we learn about wineries and the wines produced in Tennessee the more we want to know.

We visited 18 Tennessee wineries and spoke with owners and winemakers from Sevierville (pronounced severe-ville) to Nashville. Along the way we visited four distilleries; one was a micro-distillery.

Numerous articles with photos are in the writing process and some are already on the Wine Trail Traveler website. 1st Annual Blue Ridge Vineyard Jazz Fest in Virginia

Save the date May 28, 2011! The Annual Blue Ridge Vineyard Jazz Fest begins this year. A portion of the proceeds will benefit Grown Locally, Inc. The focus of Grown Locally is support for local artists and local produce providers.

The Jazz Fest will take place at Blue Ridge Vineyard on May 28, 2011. Several music events will take place including David Oakes & Friends, The Bill Hoffman Quintet, The Judi Jackson Trio and The Lenny Marcus Trio. Food vendors will be available. Blue Ridge Vineyard offers outstanding views of the Blue Ridge Mountains. The winery is child friendly and dog friendly (with a leash.)

How to Make a Wine Reduction Sauce

Have you ever wondered how to make a Wine Reduction Sauce? At a recent visit to DelMonaco Winery in Tennessee we received the directions on how to do just that. Keep these directions handy for the next time you need a wine reduction sauce.

DelMonaco Winery & Vineyards is delightfully, friendly winery to visit located in Baxter, Tennessee.

Wine Reduction Sauce

The goal of a sauce like this is to take a good wine and make it thicker by reducing the amount of water, thereby having an intense flavor. Use a full-bodied wine like DelMonaco Blackberry Wine.

Ingredients

2 cups full-bodied wine, like DelMonaco Blackberry Wine
1-2 T Butter

Directions

  1. Put 2 cups of wine in a shallow sauce pan over medium-low heat for about 20-30 minutes. Do not let the wine boil. Let it reduce by about 2/3 of the original amount. At this point you should notice a much thicker wine.
  1. Turn off the heat, add 1-2 tablespoons of cold butter, and whisk it into the wine.

Serving Suggestions

Serve over steak or vegetables.

You may choose to serve this with fresh fruits as well. Dice the fruit and toss in when the wine has thickened. Mix just before serving.

Yesterday while visiting a Tennessee winery near Nashville, we chanced to meet a couple from Illinois. They were enjoying their visit. Asked about the 100 wineries in Illinois, they said they had not been to any of them. They were having such an enjoyable time at Long Hollow Winery & Vineyards, they are sure to start visiting local wineries when they go back home. (Long Hollow is owned and operated by Stu Phillips. a member of the Grand Ole Opry.)

Remember to visit and support the wineries in your own backyard.
