Easy Pasta Salad Recipe with Vidal

On the East Coast some of us are getting relief from the drought and heat the past summer days have brought. This morning we woke to a delightfully soft rainfall that is hopefully soaking the soil and giving relief to gardens and vineyards.

During the warm and hot summer days, cold and easy summer recipes are nice to have on hand. Barrington Cellars in New York shared the following recipe with the Wine Trail Traveler website.

Jazzed-Up Macaroni Salad

Ingredients

1 lb Your Favorite Pasta
¾ c Mayonnaise
1 c Barrington Cellars Vidal Wine
½ – ¾ c corn relish

Directions

1.  Cook pasta, drain and chill.
2. Whip the wine and mayonnaise together and set aside.
3. Mix together the pasta and corn relish.
4. Add the mayonnaise mixture to the pasta and corn relish.
5. Chill well before serving.

    8th Anniversary for Laurello Vineyards

    Congratulations to Laurello Vineyards in Geneva, Ohio! Laurello Vineyards is celebrating its 8th Anniversary this weekend!

    Laurello Vineyards is a delightful winery that is inclined to make one feel right at home. Our visit was in 2008 (Wine Trail Traveler article) and I remember the friendliness of the owners, Larry and Kim, as well as the ambiance of the tasting room.     A Red Wine for Dinner – Grenache

    Yesterday with the daytime temperatures hovering at about 104 degrees and no rain in sight, we decided upon a light dinner with a red wine. So it was a green salad with lightly grilled potatoes, zucchini, etc. Terry decided to open a bottle of La Cereza Grenache 2005. Located in Temecula Valley, California, La Cereza Winery produced this particular Grenache. This dark, purple wine offered plum and black cherry notes with hints of spice on the aroma and taste. The aftertaste had nuances of plum. There was a bit of heat on the finish. Be sure to notice the front wine label, which is based on a painting by Anton Arkhipov.

    Chardonnay, Italian Sausage and Zucchini

    Yesterday, we enjoyed dinner a Chardonnay from California paired with Italian sausage, garden fresh zucchini and potatoes.

    C. Donatiello Winery produced this 2006 Chardonnay Russian River Valley, which is located in Sonoma. The winery produces vineyard specific wines and this particular Chardonnay. This dark yellow Chardonnay was complex. The aroma offered nuances that included citrus with hints of lemon, green apple and a touch of pear. The Taste was smooth with medium body. This is a dry wine. There is a nice marriage on the finish of apple and caramel with a citrus influence.

    The C. Donatiello logo is unique and comprised the label for the “front” of the wine bottle. The letter C has been Taken and placed at three different direction to form a “dot.” These “dots” are then placed in the shape of the letter D. The result is simple and yet creative and sophisticated. The “back” label includes information for consumers such as harvest date, barrel aging, barrel composition, date the wine was bottled and cases produced.

    The petite size potatoes were scrubbed, and tossed with 100% Varietal Grape-Seed Oil Grapefruit Chardonnay from Après Vin. The potatoes were sprinkled with sea salt and wrapped in aluminum foil – grilled until done. The finished potatoes were good. The same was done with the small zucchini, which was cut into quarters. The zucchini was excellent. Many times I find zucchini to be somewhat bland, but the Grapefruit Chardonnay grape-seed oil added so much flavor that I am actually looking forward to eating more.

    Fun News! Vineyards, Golf, Sheep and Goats

    Happy July 4th! Hope you are enjoying a relaxing day, drinking a glass of wine – perhaps a fruity, crisp white Riesling and staying cool.

    This morning I read one of our local online news stations wtop.com. They feature a section called Watercooler. An article ND golf course brings in weed-eating goatsis about goats eating grass on a golf course. It seems that the goats can be moved to different locations on the golf course as needed. The article is based on a full article at http://kfyrtv.com/News_Stories.asp?news=41248.  I am not a golfer so I’m wondering what most golfers think. Any golfers out there care to express an opinion?

    Some vineyardists are already finding it useful to use Babydoll sheep in their vineyards to keep the weeds and grass under control. Navarro Vineyards in Mendocino County is using Babydoll sheep. Using certain types of sheep in vineyards is especially beneficial in vineyards that focus on organic farming.

    Many people are concerned about energy usage today. Perhaps we need to step back into history and look at other ways to save energy. Me? I wouldn’t mind having a sheep or two instead of a lawnmower – somehow I don’t think my neighbors or homeowner’s association would approve. 🙂

    What are the perks of your job?

    It is always interesting to gage reactions when someone asks me about my job. I tell them that I am a travel writer that travels to wineries and vineyards around the world and write articles about them. You can observe them processing. I know they processed the word travel and from wineries they processed the word wine. Their comment is almost always, “Well, I guess someone has to do that.”

    What people don’t seem to process are the words writer and write. This plum job certainly has its benefits: meeting marvelous people, travel to places never seen before, and of course wine. However there is an unseen part of the business: writing, photography, editing, photo editing, webpage construction and publishing. Then there is also the travel to wine regions by car or a combination of plane and car. These are not nearly as glamorous as the ideas of travel and wine. Spending evenings in hotel rooms wears off easily. Especially after a faulty heating unit sent billowing towers of smoke into our room and we spent the evening in the lobby watching the volunteer firemen come and go. They were much more excited than we were.

    If one really thinks about it, there are perks to almost every job. There are also the parts of the job that have to be done that are not necessarily perkish. Just once I’d like someone who asked me about my job to respond with, “All that writing, it must be a hard task.”

    Plantation Punch Recipe for the 4th of July

    The Fourth of July promises to be hot on the East Coast and no matter where you will be celebrating July 4th if you need a large, cool beverage think about this easy to make wine punch recipe that was provided by Bruce Perrygo when we visited Ingleside Vineyards a couple of years ago. It calls for Blue Crab Blanc that the winery describes as “light with a fruity bouquet.” If you don’t have the Blue Crab Blanc on hand, it should be easy to find a similar type wine to use in the recipe. Try the recipe, as it sounds delicious and refreshing for a delightful, summer day.
