Chocolate Almond Shortbread Recipe with Pinot Noir

What could be better for Valentine’s Day than home baked chocolate shortbread with Pinot Noir? Enjoy creating this recipe from J Vineyards & Winery in Sonoma County, California.

Chocolate Almond Shortbread

Ingredients for Chocolate Almond Shortbread

8 ounces butter (at room temperature)
2 ounces granulated sugar
1 ounce powdered sugar
1 ounce cocoa powder
1 teaspoon vanilla
½ teaspoon salt
8 ounces all purpose flour
1 ounce chopped almonds

Ingredients for Pinot Noir Dried Bing Cherry Puree

8 ounces dried Bing cherries (or other Fruit)
4 ounces J Pinot Noir
2 ounces water

Directions for Chocolate Almond Shortbread

1. In mixer on low speed blend butter, sugars, cocoa, vanilla and salt.
2. Then add flour, and nuts.
3. Roll out dough between two pieces of parchment paper to 1/8 of an inch.
4. Chill dough in refrigerator for one hour; this will make it easier to cut into desired shapes.

Bake 350º for 8-10 minutes.

Directions for Pinot Noir Dried Bing Cherry Puree

1. Combine all the above in small saucepan and bring to a boil, then adjust heat to low and cook until cherries are soft, about 10 minutes.
2. Pour into blender and puree.
3. Allow mixture to cool then place in a pastry bag for piping.

Ingredients

1-1/2 oz. Van Gogh Dutch Chocolate Vodka
1 Strawberry, chopped
Handful of Mint Leaves
1 tsp. Agave Nectar
1/4 oz. Fresh Lemon Juice
3 oz. Sparkling Wine

Directions

Muddle the strawberry with the agave and lemon.  Add vodka and strain into chilled Champagne flute.  Top with the sparkling wine.

1/2 oz. Fresh Lemon Juice
1/4 oz. Rich Demerara
1 Whole Strawberry
Topped with Chandon Rosé
Chocolate Drizzle

Directions

Muddle strawberry in Boston Shaker. Add Van Gogh Dutch Chocolate, lemon juice and rich demerara. Shake and double strain. Make an artistic design with chocolate in a martini glass. Top with Chandon Rosé. Serve with a chocolate strawberry on the side.

Ingredients

2 oz. Van Gogh Pomegranate Vodka
3 oz. Pink Lemonade
(Remember the raspberries and lemon for the garnish)

Directions

Pour ingredients into a rocks glass with ice and stir.  Garnish with floating raspberries and a squeeze of lemon.

1 oz. Hazelnut Liqueur
1/2 oz. Dark Crème de Cacao
Splash of Cream

Directions

Pour vodka, hazelnut liqueur and dark crème de cacao into a rocks glass filled with ice and stir. Top with a splash of cream and garnish with a sprig of mint.

Below are reviews of Bonny Doon Vineyard wines that you may want to enjoy for Valentine’s Day. Many thanks to Bonny Doon Vineyards for the opportunity to taste and write about some of their many available wines.

Of the Bonny Dune wines perhaps our favorite was the 2010 Sparkling Albarino Central Coast wine produced in the traditional sparkling wine method. This sparkling wine was aged for 14 months in the bottle prior to disgorgement. The result was a 12.5% alcohol wine with a golden color and multiple columns of beads forming a mousse in the center of the wine glass. The wine offered an aroma with peach notes and the taste included notes of peach, citrus and mineral. The mouthfeel was smooth. The finished was lively and refreshing with a peach aftertaste yielding to mineral. Consider this sparkling wine for Valentine’s Day.

We also tasted the 2014 Grenache which had a translucent dark ruby color. The aroma included notes of spices and red berry fruit. The taste offered notes of red raspberries, cooking spices and mild tannins. The Grenache had a smooth mouthfeel. The fruity finish yielded to spices. There was some heat on the aftertaste.

The 2014 Cinsaut Counoise was a blend with 67% Cinsaut and 33% Counoise. The wine with 13.7% alcohol was a translucent ruby color with an aroma of black fruits and spice. The taste offered a variety of notes including plum, blackberries, cinnamon, nutmeg and cloves. The medium/full bodied wine had a smooth mouthfeel. Mild tannins were noticed. The finish was fruity and spicy.

Bonny Doon Vineyard produces an array of wines including red, white and sparkling. Other wines produced include: Le Cigare Blanc, A Proper Pink, Pinot Noir, Popelouchum Cougnà, Cinsaut Counoise, The Heart Has Its Rieslings, Gravitas, and  BIen Nacido Syrah. Sparkling wines also include a Sparkling Syrah. In addition the winery produces a dessert wine, Vinferno and ciders including Querry, Querry? SparklingHard Cider and Winter Nélis Sparkling Perry.

Yesterday we had an enjoyable and fun afternoon with a group of Howard County residents where Terry explored cavas, sparkling wines from Spain. Terry presented a 45-minute talk with photos of Spain’s delicious and very reasonably priced cavas. Five different styles of cavas were offered for tasting. The organizer of the event, Susan from The Village in Howard, provided an assortment of nibbles and snacks for everyone.

Everyone was attentive and enjoyed the cavas, snacks and conversation. People were encouraged to talk and ask questions. It was interesting to hear comments about the cavas. With the first cava a brut paired with salty potato chips, someone said, “I like this.” After the first cava, the next two cavas met with even more rave reviews. Both were brut natures, one a reserva and the other a gran reserva. By the last cava, a semi-seco rosé, it seemed that the rosé was the favorite cava for several of the attendees.

The people who attended the cava talk are members of The Village in Howard, a part of the worldwide village group that encourages people to “age in place.” This was our second presentation about wine to members of The Village in Howard. Our first presentation centered on our book Georgia, Sakartvelo: the Birthplace of Wine.

The Village in Howard (TVIH) offers a variety of activities for those aged 55 and over. The group is fairly new, having started in 2015 and already has more than 100 members. Depending on their needs people can choose either associate memberships or full memberships.

The TVIH organization offers a variety of events. The online February calendar includes: Happy Hours, Lunch Bunch, Sneakers and Coffee, Bridge Club, Writing Our Lives-How to Create A  Memoir, Travel Club/Potluck, and My 3 Cents.

We enjoyed our time with this group of friendly TVIH members and we are looking forward to participating with them in other events.

The Maryland Winter Wine event was organized by Kevin Atticks of Maryland Wine. The event, considered by some to be the best wine event on the East Coast, started at 6pm with a special sparkling wine tasting. This part of the event took place in the train museum where one could talk with winery owners and taste some of the sparkling wines coming out in Maryland. In addition there was time to browse the numerous historic displays related to trains. The wineries offering sparkling wines included: Old Westminster Winery, Cygnus Wine Cellars, Crow Vineyard, Great Shoals Winery, Elk Run Vineyards and Knob Hall. While they were all tasty, my favorite was the Cygnus Wine Cellars’ Royele 2011 Blanc de Blanc. Prices for the sparkling wines ranged between $28 and $46. It was very enjoyable to taste sparkling wines and amble past displays of historic train memorabilia.

At 7pm the doors to the train museum’s roundhouse opened and attendees quickly entered the large rotunda. Train engines and cars surrounded the circumference of the room. Inside the circle of engines, almost 20 participating wineries were at tables pouring wines with catered foods including tender roast beef slices on a pretzel roll. Wines included whites, rosés, reds and dessert wines. The white wines were produced with Pinot Gris, Grüner Veltliner, Albariño, Vidal Blanc, Chardonnay, Viognier, Traminette, Gewürztraminer and Vignoles. Red wines included several varieties: Cabernet Franc, Barbera, Merlot and Malbec. Three dessert wines were available: Cygnus Wine Cellars’ Port of Manchester 2010, Knob Hall Winery’s Starboard 2014 and Thanksgiving Farm’s Dessert Wine 2013.

Live music at the event featured David Bach and his jazz band.
At the end of the evening, one well-known East Coast wine writer noted that the B & O Museum location and the event is one of the best East Coast wine events. If you missed the 2016 event, be sure to add next year’s Winter Wine event to your January calendar. My only hope for next year’s event is that many more of Maryland’s 60 plus wineries will participate. Watch the Maryland Wine website for the 2017 WinterWine Wine event date.
The Maryland Winter Wine event is a great way to learn about the Maryland wine industry and also spend a cold January evening with wine, food and live music.

Last Thursday night we drove to Baltimore’s B&O Museum for a lovely evening of Maryland wines and a catered affair. After enjoying a delightful time tasting sparkling wines, still wines, meeting other wine enthusiasts and indulging in wonderful food, we returned home to await #Blizzard2016.

We didn’t wait long and the storm arrived in our area on Friday mid-afternoon. We’ve been snowbound ever since. We share a long driveway with three other homes. Sunday we slowly began venturing out to shovel while taking suggestions of doing a little at a time. All of our personal driveways were cleared late Sunday. We ended the day with a potluck dinner at one of our neighbors that included delicious hot homemade chicken soup, warm homemade rolls, a sautéed spinach and broccoli combination and a raspberry tart. With the meal we added a Sauterne, Ruby Port and our homemade white Cabernet Sauvignon.
All in all it was a great time to eat and enjoy conversation with our neighbors while patiently waiting for a snowplow to clear our street. We hope others have weathered the storm as well as we have. It will be great conversation topic in the years to come.

Wines for a blizzard

In a few hours the snow is expected to fall. By later tonight, we will experience a rare blizzard for our Central Maryland location. Expected snowfall totals this morning put us somewhere between 20 and 30 inches of snow. With the winds blowing we can expect drifts several feet high. This must be our payback for a warmer than average December with temperatures for ten days above 60º. My early game plan is to shovel frequently, then retire by the fire. What wines would pair with a blizzard?

For this snow event I decided to go with sweet wines that can be sipped. I assume I’ll burn off the increased calories shoveling snow. Also sipping sweet wines by the fire on a cold blizzard day just seems to match well. For the three-day event, I selected several wines.

Before the blizzard hits I’ll open a 2005 Chateau Raymond-Lalon Sauternes. I visited this winery in France a few years ago and was impressed with this sunshine in a glass. As the evening progresses and heavier snows blanket the area, I’ll open a Pillar Bluff Vineyards Wink, a Ruby Port from Texas. I’ll nurse this wine throughout the evenings over the next few days.

On Saturday morning the task should be a bit daunting. I plan to open a low alcohol Quebec Icewine, a 2008 Megalomaniac Riesling Icewine. By Saturday afternoon, while still getting dumped on I’ll open a Sanders Family Winery Cream Sherry. Saturday evening I’ll go back with the Ruby Port.

Sunday is clean up day and although I will have been shoveling for the past two days, I expect there will be plenty of snow that I’ll need to move on Sunday especially the path to the wood pile. On Sunday, I’ll open a Domaine L’ange Garden Vin Blanc Fortifié from Quebec. They get a lot of snow in Quebec so this wine seems fitting.

Alcohols range from a low of 10.0% for the Icewine up to 21% for the Ruby Port. These selections should pair well on a weekend that will be consumed with fire and ice. What wines would you pair with a blizzard?
